Umuarama, v. 18, n. 3, p. 161-167, jul./set. 2015.RESUMO: Objetivou-se com este trabalho avaliar o efeito da restrição alimentar sobre características de carcaça e componentes não-carcaça de cordeiros terminados em confinamento. Para tanto, foram utilizados 24 cordeiros machos, da raça Santa Inês, com peso médio de 20 kg, alocados em delineamento inteiramente casualizado, estudando-se quatro níveis de restrição alimentar (0, 20, 40 e 60%). Dezoito animais foram submetidos durante 64 dias a 20, 40 e 60% de restrição alimentar em função do consumo dos animais alimentados à vontade (0% restrição) e, posteriormente, todos os animais receberam alimentação à vontade por um segundo período de 64 dias. A análise de regressão foi utilizada para estudo dos níveis de restrição alimentar, quando detectadas diferenças significativas na análise de variância. A restrição alimentar promoveu diminuição linear no peso corporal final, peso corporal de abate, pesos de carcaça quente e fria e pesos de pele, cabeça, trato gastrintestinal vazio e intestino, sugerindo que não houve compensação do ganho de peso durante o período de realimentação para essas características. Não houve efeito da restrição sob os rendimentos de carcaça e componentes não-carcaça, e características qualitativas da carcaça. A restrição alimentar por 64 dias seguida por alimentação ad libtum por mesmo período de tempo causa prejuízos nos pesos de carcaça e de alguns subprodutos oriundos do abate dos animais, não sendo recomendada nas condições estudadas. CARCASS CHARACTERISTICS OF LAMBS SUBMITTED TO FOOD RESTRICTIONABSTRACT: This work aimed to evaluate the effect of food restriction on the carcass characteristics and non-carcass components of lamb terminated in confinement. In order to do so, 24 Santa Inês male sheep were used, with an average weight of 20 kg, allocated in fully randomized design, where four levels of food restriction were studied (0, 20, 40 and 60%). Eighteen animals were submitted during 64 days to 20, 40 and 60% food restriction according to the intake of animals fed ad libtum (0% restriction) and later, all animals were freely fed for a second period of 64 days. The regression analysis was used for the study of food restriction levels, when significant differences were detected in the analysis of variance. The food restriction caused a linear decrease in the final body weight, body weight at slaughter, weights of warm and cold carcass and weights of the skin, head, empty gastrointestinal tract and bowel, suggesting that there was no compensation in the weight gain during the feedback period for these characteristics. There was no effect of the restriction on the carcass yields and non-carcass components, and qualitative characteristics of the carcass.
