Abstract: O trabalho foi desenvolvido com o objetivo de se verificar a influência de Saccharomyces cerevisiae na forma de produto comercial, fermento biológico fresco para panificação, na atividade e no padrão eletroforético da peroxidase em folhas de milho e sorgo.
