Grain quality determination involves important stages such as collection of the representative sample, homogenization, and dilution. The interrelation among sampling, homogenization, and working sample size is essential to the reliability of the information generated. Therefore, this work aimed to analyse the performance of mechanical homogenizers used in the commercialization of grains in Brazil, as a function of the size of the working sample masses during grain classification. The samples were homogenized and diluted in Boerner, 16:1 multichannel splitter, and 4:1 multichannel splitter until reaching masses of 0.025, 0.050, 0.075, 0.100 and 0.125 kg to determine the level of damaged grains. A 3 x 4 x 5 factorial design was used, meaning three treatments relative to homogenizers (Boerner, 16:1 multichannel splitter, and 4:1 multichannel splitter), four dilutions (4, 8, 12 and 16% damaged grains), and five grain sample sizes (0.025, 0.050, 0.075, 0.100 and 0.125 kg) with nine repetitions. The means were compared by Tukey test and to the original means of prepared samples (4, 8, 12, and 16%) by Student’s t-test. Working samples can be utilized with masses between 0.025 and 0.125 kg to classify damaged soybeans grains. The devices Boerner, 16:1 multichannel splitter, and 4:1 multichannel splitter are similar in the reduction and homogenization of soybean samples for different levels of damaged grains and sample sizes.

RESUMO.Micotoxinas são substâncias tóxicas produzidas pelo metabolismo secundário de fungos filamentosos e capazes de desencadear uma série de problemas relacionados à produção agropecuária e à saúde pública. O monitoramento destes agentes tóxicos é necessário, devendo-se levar em consideração para realização de tal atividade a diversidade das amostras que são colhidas, os tipos distintos de micotoxinas, bem como a distribuição não uniforme destes contaminantes. A escolha adequada dos pontos de amostragem, bem como do uso de uma metodologia eficaz que considere os possíveis interferentes e contemple os níveis de detecção esperados também são fatores indispensáveis para o sucesso e confiabilidade das análises realizadas. Com o intuito de atender às exigências da legislação brasileira para micotoxinas, vários alimentos deverão ser analisados, para isso, o conhecimento de procedimentos para colheita de amostras e análises laboratoriais são importantes para pequenos produtores e para indústria de alimentos. Considerando que a aplicação adequada destas metodologias não apenas pode aumentar a produção agrícola e sua consequente lucratividade, como também propiciar a segurança alimentar dos diversos produtos brasileiros destinados às dietas humanas e/ou animais, esta revisão visa descrever as principais metodologias existentes no Brasil para colheita de amostras e análise de micotoxinas, assim como abordar os principais métodos analíticos existentes para detecção e quantificação destes contaminantes. Mycotoxins are toxic substances produced by the secondary metabolism of filamentous fungi and able to trigger series of problems related to agricultural production and public health. Thereby, monitoring of toxic agents is absolutely necessary and must be taken into account for the performance of such activity the diversity of samples to be collected, the different types of mycotoxins as well as the non-uniform distribution of these contaminants. Proper selection of sampling process as well as the use of a effective methodology will eliminate the trace of interference in order to have a successful analyses. Thus, in order to meet the requirements of the current Brazilian legislation for mycotoxins, various foods should be analyzed for this, knowledge of procedures for sampling and laboratory analyzes are of fundamental importance to both small producers and for the food

In the animal feed industry, an ever growing increase in quality has been observed, but the main feature of a food is related to its security because the contamination poses a risk to animal health. The problems caused by fungal colonization is the significant loss of food quality, because even those who do not produce mycotoxins cause losses in the nutritional quality. Researches show that the most important Fumonisins are the mycotoxins found in corn, particularly when cultivated in warmer regions, produced by the fungi Fusarium verticillioides and F. proliferatum. Equine leukoencephalomalacia is a disease caused by ingestion of mycotoxin produced by the fungus F. verticillioides. Those infective mycotoxins are fumonisin (B1, B2, A1 and A2), having the B1 type as the most common and the most severe. The animals contamination occurs by ingestion of corn and its by-products in food that are contaminated by the fungus. This review addresses the importance of fungal contamination of the genus Fusarium by the production of fumonisin in horse feed and its relation to leukoencephalomalacia.
