INTRODUÇÃOO queijo é um dos alimentos mais consumidos no Brasil. Sua produção foi introduzida no país com a vinda de imigrantes europeus, que adaptaram os procedimentos de elaboração, resultando em diversos tipos de queijos artesanais. Os que merecem destaque pela popularidade no país são originários de Minas Gerais e sobressaem pela identidade própria, devido à diversidade de culturas láticas da região, à qualidade do leite, ao processamento, às condições de maturação, entre outros fatores (LISITA, 2005). O queijo é composto por proteínas, vitaminas do complexo B, vitamina A, niacina, riboflavina, ácido fólico e minerais (COSTA JÚNIOR, 2014; ABIQ, 2011). Entre os anos 2000 e 2010 o consumo do queijo aumentou. No Brasil, sua produção encontra-se em ascensão, embora boa parte do montante produzido envolva queijos comerciais, tais como: Minas Frescal, Muçarela, Parmesão, Prato, entre outros. A oferta de queijos artesanais regionais vem crescendo no país, e sua produção está concentrada na região Sul e Sudeste, porém, não eram comercializados em todo o território nacional devido às barreiras legais.
