Our understanding and prevention of postharvest losses are critical if we are to feed a growing global population. Insect infestation-related losses of stored commodities are typically considered only in terms of quantitative, physical weight loss. Insect infestation affects the nutritional value and some nutritional components are impacted more severely than others. We infested maize and cowpea grain with commonly occurring stored product insect pests, and mapped infestation levels against nutritional composition over a 4-to-6 month storage period to analyse how insect infestation relates to different macro-and micronutrient contents. Insect infestation decreased the carbohydrate content of the stored grains, causing a relative increase in the proportion of protein and fibre in the remaining grain, and moisture content also increased. Sitophilus zeamais preferentially fed in the floury endosperm of maize, resulting in more carbohydrate loss relative to protein loss. Conversely, Prostephanus truncatus consumed the germ and endosperm, disproportionately reducing the fat, protein, iron and zinc grain contents. Nutrients are distributed more homogenously within cowpea than in maize grains, but Callosobruchus maculatus infestation increased the relative protein, fat, iron and zinc to carbohydrate ratios. This indicates how the nutrient content of insect-infested stored grain depends upon the grain type, the infesting insect, and the infestation level. Insect infestation therefore has consequences for human nutrition beyond those of grain weight loss. Using data collected on the changing nutritional composition of grain over time, with and without insect infestation, we modelled the associations between infestation and nutritional quality to predict estimated nutritional losses that could be associated with consumption of insect-infested stored maize and cowpea.

This research aims to modifying Canna edulis flour to improve resistant starch content and identifying the effect of consumption of gluten-free enriched with resistent starch type 3 from Canna edulis flour toward profil of glucose, lipids and short chain fatty acids in healthy mice. Production of Canna edulis flour rich in resistant starch type 3 with modifications of 3 cycle autoclaving-cooling, and then formulation of the 3 types of glutenfree enriched RS3 from Canna edulis flour. In-vivo analysis was performed using the 24 rats wistar divided into 4 groups: the standard feed, high protein gluten free flour, high fiber gluten-free flour, and all purposes gluten-free flour. Evaluation in vivo done to know the profile of glucose, lipids and short chain fatty acids. The results show that 3 cycle autoclaving-cooling can increase the level of resistant starch at 39.5%. Diet of three types of gluten free can control the profile of glucose and lipids compared to standard feed. The main short chain fatty acids were acetic acid, propionic acid and butyric acid. This indicates that consumption of three types of gluten-free flour enriched RS3 from Canna edulis flour provides positive benefits for profiles of glucose, lipids and short chain fatty acids.

O gérmen com pericarpo, subproduto do processamento do grão de milho, possui alto valor nutricional, porém é pouco aproveitado na alimentação humana. Os objetivos deste estudo foram caracterizar quimicamente o gérmen com pericarpo de milho desengordurado (GMD), desenvolver formulações, avaliar a aceitabilidade e analisar a composição centesimal de biscoitos tipo cookie contendo GMD. Foi determinada a composição centesimal do GMD e dos biscoitos, e analisados o conteúdo de minerais e o escore de aminoácidos essenciais (EAE) do GMD, conforme metodologias padronizadas na literatura. Foram formulados biscoitos com 0% (biscoito controle), 50% (B50) e 100% (B100) de substituição de farelo de aveia por GMD. Para a análise sensorial, utilizou-se escala hedônica de nove pontos. O GMD é fonte de proteínas (11,7g 100g-1), que contêm ótimo perfil de aminoácidos (EAE=1,26) e é rico em fibra alimentar (28,9g 100g-1), ferro e zinco (5mg 100g-1). Todos os biscoitos foram aceitos sensorialmente (aceitação global e aparência), sendo o biscoito B50 mais aceito que o B100. Os biscoitos com GMD são fonte de proteínas (12,5g 100g-1) e contêm alto teor de fibras alimentares (10,0g 100g-1). O emprego do GMD na formulação de alimentos à base de cereais elevou o valor nutricional desses produtos, podendo agregar valor a este subproduto da indústria de milho.
