-This study evaluated the effects of crude glycerin (CG) supplied separately from the other dietary ingredients to goats during the feedlot and in the pre-slaughter lairage on the nutrient intake, performance, behavioral and physiological parameters, carcass characteristics, and meat quality. Twenty-eight uncastrated male goats from a cross between the Boer breed and mixed-breed goats were used in a completely randomized design in a 2 × 2 factorial scheme, consisting of the feedlot with or without CG inclusion in the diets (96.90 g kg -1 DM) and the pre-slaughter lairage, also with or without the ingredient. In the feedlot, goats fed CG had a lower intake of dry matter and nutrients. Crude glycerin intake reduced the weight gain and body weight of goats and increased feed conversion. Weights of carcass and cuts (leg, loin, ribs, and shoulder) were lower when the animals consumed CG in the feedlot. In pre-slaughter lairage, concentrations of cortisol were lower when the animals consumed CG. Characteristics of carcass and meat (pH, color, water holding capacity, cooking loss, and shear force) were not changed by the supply of CG during the pre-slaughter. When supplied during the feedlot period and separately from the other dietary ingredients, CG negatively affected the performance and carcass characteristics of goats without changing meat quality. In the pre-slaughter lairage, CG intake lowers the cortisol level and does not change the behavioral parameters or carcass and meat characteristics of goats.

The aim of this study was to characterize and quantify commercial sheep meat cuts and their tissues in relation to different ranges of slaughter body weight of lambs. One hundred and fifty lambs were divided according to the following slaughter weight ranges: 16 to 20 kg, 21 to 25 kg, 26 to 30 kg, 31 to 35 kg, 36 to 40 kg, and 41 to 45 kg. The commercial meat cuts evaluated were the neck, shoulder, leg, ribs, fixed ribs, floating ribs, loin with void, low. Based on these data, the cut yields in relation to cold carcass weight, fat yield (subcutaneous and intermuscular), muscle yield, and muscle/fat tissue ratio were obtained. Animals slaughtered with 21 to 25 kg exhibited higher shoulder yield than heavier animals slaughtered with 41 to 45 kg. Similar results were obtained for the leg. In general, the commercial cuts of animals slaughtered with lighter weight provided higher muscle yields and lower fat yields. Body weights classified as light and medium exhibited a better tissue ratio, providing a better edible portion to consumers. Key-w o r d s growth and development, lambs, meat, tissues, yields R e s u m o Objetivou-se quantificar os cortes comerciais e seus tecidos em relação às diferentes faixas de peso corporal de abate de cordeiros. Foram utilizados 150 cordeiros sem raça definida e divididos nas faixas de peso corporal de abate, entre 16 a 20 kg; 21 a 25 kg; 26 a 30 kg; 31 a 35 kg; 36 a 40 kg e 41 a 45 kg. Os cortes comerciais avaliados foram o pescoço, paleta, pernil, costilhar, costelas fixas, costelas flutuantes, lombo com vazio e baixo. A partir desses dados calculou-se o rendimento dos cortes comerciais em relação ao peso de carcaça fria, rendimento de gordura (subcutânea e intermuscular) e de músculo e a relação músculo/gordura. Nos animais abatidos com 21 a 25 kg foi verificado maior rendimento da paleta em relação ao grupo de animais com 41 a 45 kg. Para o pernil, os resultados foram semelhantes aos da paleta. De um modo geral, os cortes comerciais dos animais abatidos mais leves apresentaram maiores rendimentos de músculo e menores de gordura. Os pesos corporais considerados como leves e medianos apresentaram uma melhor relação tecidual, proporcionando melhor porção comestível.

The objective of this study was to obtain information with scientific validity regarding the probable physiological alterations that sheep may suffer in the period prior to slaughter and its relationship with welfare conditions and maintenance of homeostasis. Twenty-nine castrated male lambs were used, clinically healthy, with no defined breed, and aged up to one year. Before slaughter, the heart and respiratory frequencies were measured, as well as the rectal temperature. At the time of bleeding, a blood sample was collected for analysis of hematological parameters (lactic acid, glucose, hematocrit). The mean value found for the rectal temperature was 39.30 ± 0.45 °C, for respiratory rate of 64.10 ± 28.52mov/min, heart rate of 106.90 ± 30.57bat/min, lactic acid of 4.81 ± 1.04mmol/L, glucose of 69.79 ± 10.33mg/dL and hematocrit of 38.93 ± 3.28%. The database analysis showed a low and positive correlation between respiratory rate and rectal temperature. It was concluded that lambs kept at high temperatures showed an increase in respiratory and cardiac frequencies, as well as an intensification of the stress condition reflected by the increase in plasma lactic acid levels.
