Show more

“…The meta-analysis study by Belluco et al (2016) also demonstrated a reduction of microbial load of E. coli and enterobacteria after carcass washing. Isolan et al, (2019) also observed a reduction of microbial load of Salmonella after carcass washing. However, Giombelli et al (2015) did not observe a reduction of E.coli after carcass decontamination in five different refrigeration plants.…”

“…The carcass washing system, used as a final shower in the evisceration line, is recommended by The Codex Alimentarius to reduce the contamination of pathogenic microorganisms, including Salmonella [31]. This washing system is adopted by poultry processing plants in the United States, Canada and European Union [32][33][34]. Recently, Brazilian legislation has allowed this procedure in order to achieve governmental guidelines, which determine zero tolerance for fecal contamination in carcasses that enter into the cooling system [33,35].…”

Recently, Brazilian legislation has allowed this procedure in order to achieve governmental guidelines, which determine zero tolerance for fecal contamination in carcasses that enter into the cooling system [33,35]. Preliminary studies evaluating carcass washing system effectiveness in Brazilian poultry slaughterhouses demonstrated that this procedure avoids the trimming of some carcasses, but does not eliminate the risk of Salmonella contamination in chicken meat [33].…”
