-The objective of this study was to evaluate live weight and carcass traits, from birth to slaughter, and meat quality of Nellore (NEL), Curraleiro Pé-Duro (CPD), and crossbred (F1) products in the state of Piauí, Brazil. Progenies from CPD, NEL, and their F1 crossbred (½ NEL + ½ CPD), a total of 252, males and females, from birth to 24 months of age, were evaluated in a comparative study in growth performance. The steers were sent to slaughter at 28 months of age and carcasses and meat quality were analyzed. After slaughter, carcass weight, dressing percentage and Longissimus dorsi area (rib eye area) were evaluated; an index was created by the relationship between these measures per hundred kg of chilled carcass produced.To assess meat quality, the shear force, water-holding capacity, color, brightness, pH, and cooking loss were investigated. Results obtained showed that month and year of birth were significant on growth, indicating influence of climatic variables. Nellore offspring was heavier than F 1 and this was heavier than CPD throughout the study period, including the hot and cold carcass. No differences were found in dressing percentage among NEL and F 1 , but CPD and F 1 showed a rib eye area and index significantly higher than NEL. The meat from CPD group presented a stronger red coloration than the others, but there was no significant difference in the remaining meat qualitative variables among the three groups. Curraleiro Pé-Duro and F 1 crossbred produce more meat per 100 kg of carcass than Nellore in natural pasture of Piauí State.

A raça Nelore é considerada tardia sexualmente, pois enquanto fêmeas taurinas atingem a puberdade com cerca de 10 a 15 meses, nos zebuínos ocorre dos 16 a 40 meses. Há uma constante busca constante de técnicas efetivas que melhorem a eficiência reprodutiva. A puberdade é determinada por fatores genéticos, juntamente com a taxa de crescimento e peso corporal, que são bastante influenciados por fatores ambientais, destacando o manejo nutricional. O estudo foi realizado em uma propriedade localizada em Porto Esperidião-MT, com a utilização de 223 fêmeas Nelore PO com idades que variaram de 12 a 15 meses. Um grupo de novilhas foi formado por filhas de touros com circunferência escrotal (CE) de 40 cm, outro grupo por filhas de touros com CE de 41 cm e assim por diante, até 46 cm, totalizando 7 grupos. O tratamento estatístico R-Quadrado indicou que o modelo ajustado explica 88,1536% da variabilidade na CE. O coeficiente de correlação foi igual a 0,938902, indicando uma relação relativamente forte entre as variáveis CE e peso aos 13 meses. O tratamento estatístico permitiu obter um modelo linear para descrever a relação entre Peso (kg) e CE (cm), com a equação: Peso (kg) = - 20,6429 + 8,5 x CE (cm). Com essas informações é possível auferir a importância da medida de circunferência escrotal em touros da raça Nelore, por apresentar correlação alta e positiva com o peso corporal de novilhas e com escore de trato reprodutivo aos 13-14 meses de idade.

The objective was to evaluate the cost of calf production in a beef cattle breeding system with mated Nellore heifers from 12 to 17 months of age. It was also intended to identify the components that exerted greater influence on the operational costs of the activity. The evaluation of the was considered from the weaning of the heifers in June 2019 until May 2021, when the calves of these heifers were weaned. For profitability analysis, gross revenue, total operating cost and economic indicators such as operating profit, profitability index and leveling point were considered. The items that exerted the greatest influence on the costs of the activity were food with 65.85% and labor with 19.45%, however, a profitability index of 18.64% was obtained, indicating that the livestock activity of raising of Nelore calves, developed in the analyzed production system, is profitable. The economic analysis of livestock is a fundamental tool for management and decision making, as well as for profitable and efficient production.
