Bacillus cereus as the main casual agent of foodborne outbreaks in Southern Brazil: data from 11 years

Abstract: Foodborne diseases are a global concern. In Brazil, the most prevalent pathogen found in foodborne outbreaks is Salmonella sp. (14.4%), followed by Staphylococcus aureus (7.7%), Escherichia coli (6.5%), and Bacillus cereus (3.1%). With the aim to perform a regional detailed analysis of foodborne intoxication, we analyzed 253 outbreaks' profile reports to Food Surveillance team of the General Secretariat of Health Surveillance of Porto Alegre, Rio Grande do Sul State, between 2003 and 2013. In contrast to what … Show more

“…In the present work, staphylococcal enterotoxins (SEs) also investigated, since enterotoxigenic S. aureus is considered the second most prevalent pathogen in foodborne diseases in Brazil 31 . The most prevalent gene was the SEA toxin, commonly related to cases of intoxication, corresponding to 75% of outbreaks, and also correlated with human food contamination 32 .…”

É notória a necessidade de avaliação e de implantação e implementação de políticas públicas relacionadas ao desenvolvimento sustentável.…”

“…The median Bacillus cereus outbreak incubation periods have been reported to be up to 4 h in a study that covered 16 years [159], but knowledge of the mechanistic basis of spore germination and outgrowth is still a difficult challenge [160]. In some countries, Bacillus cereus has been proposed as the main causal agent of foodborne outbreaks [161] and outbreaks around the world are still common especially after celebration parties [162] and in schools, as exemplified in previous reports [163][164][165]. The proper identification of the Bacillus species in a beverage from a region or location will ensure a targeted and effective control.…”
