Abstract: Abstract-Pereskia aculeataMiller is a native cactaceae found from the Northeast to the South of Brazil. This plant is recognized by the high nutritional value of their leaves, which are the most used in cooking and folk medicine. However, studies on the chemical characteristics and antioxidant capacity of the ora-pro-nobis fruits are scarce. Therefore, the aim of this study was to determine the best harvest point of the ora-pro-nobis fruits to optimize the content of bioactive compounds and their antioxidant c… Show more

“…The leaves of ora-pro-nobis showed to possess a large amount of soluble solids, being higher than in their fruits, in which, Silva et al (2018) analyzed the SST content at different stages of maturation and pointed out higher levels for ripe fruits (5.65 ° Brix). After the processing of ora-pro-nobis leaves with moist heat, the content of soluble solids decreased by 1.5 ° Brix, being still, in higher levels than in the ripe fruits described by Silva et al (2018).…”

“…The OPNF showed the most significant color difference (∆E*) about WF. The dark coloration of OPNF can be attributed to carotenoids and chlorophyll in its composition (Silva et al, 2018), while the white color of WF is due to the presence of starch. The OPNF and the flour blends (10-30%) showed a variation of ∆E* between 8.83 and 11.15 (Table 1), which indicates a visible color difference, according to Konica Minolta (2019).…”
