Synergistic antimicrobial effects of activated lactoferrin and rosemary extract in vitro and potential application in meat storage

Abstract: This study aimed to explore the antimicrobial effects of activated lactoferrin (ALF) and rosemary extract (RE) on Escherichia coli O157:H7, Salmonella Enteritidis and Listeria monocytogenes, and to investigate their application potential in the meat storage. Minimum inhibitory concentrations (MICs) of ALF, RE and ALF-RE combinations were determined via microtiter plate assay. MICs of ALF were 1% for E. coli O157:H7; 0.5% for S. Enteritidis and 0.1% for L. monocytogenes. While 15% RE inhibited L. monocytogenes;… Show more

“…Ojeda-Sana et al (2013) found that rosemary can change the permeability of cell membrane; thus, it can play a bacteriostatic role and has good antibacterial activity. This is consistent with the results of Soyer et al (2020).…”

“…Soyer et al [43] reported the antibacterial effect of rosemary ethanol extracts against L. monocytogenes in beef. The application of 45% rosemary ethanol extract for L. monocytogenes on beef led to a 2 log colony-forming unit (CFU)/g reduction in the incubation at 4 • C for 9 d.…”

“…Lactoferrin, a glycoprotein that belongs to the transferrin protein family in milk and milk products as well as neutrophil granules and exocrine secretions in mammals, was able to bind iron within the cells [95]. The ability of this 80 kDa protein to control free iron levels contributes to its bacteriostatic and health-beneficial characteristics, such as stimulating bone growth, protecting the intestinal epithelium, and promoting the immune system in animals [43].…”

“…For example, while 15% rosemary extract inhibited L. monocytogenes, 30% rosemary extract partially inhibited the growth of E. coli O 157 : H 7 and S. Enteritidis. The use of activated lactoferrin with rosemary extract enhanced the antimicrobial action of reagents, which allowed increasing storage duration of meat products [28].…”
