Celem podjętych badań było określenie wpływu dodatku zdemineralizowanej serwatki na właściwości ciasta i pieczywa pszennego. Materiał eksperymentalny stanowiła mąka pszenna typu 550 i 750 oraz serwatka w proszku, którą dodawano w ilości 2, 4, 6, 8 i 10 % w stosunku do naważki mąki. Mąkę pszenną oceniono na podstawie zawartości białka ogółem, wydajności i rozpływalności glutenu, wskaźnika sedymentacyjnego oraz liczby opadania. Analizowano właściwości mąki i ciasta pszennego bez dodatku serwatki i z jej dodatkiem na podstawie oznaczeń farinograficznego i ekstensograficznego. Wykonano wypieki laboratoryjne. Mąka z komponentem serwatki w ilości powyżej 2 % odznaczała się mniejszą wodochłonnością, a uzyskane ciasto charakteryzowało się dłuższym czasem rozwoju oraz było bardziej podatne na rozciąganie w porównaniu z próbką kontrolną. Na większość cech ekstensograficznych istotny wpływ miała interakcja pomiędzy czasem fermentacji ciasta a wielkością dodatku serwatki. Pieczywo zawierające dodatek serwatki wykazywało większą wydajność. Materiał badawczy stanowiły handlowe mąki pszenne (typu 550 i 750) oraz maltodekstryny niskoscukrzone (DE = 9,4) i średnioscukrzone (DE= 16,8). Maltodekstryny dodawano w ilości: 1, 2, 3 i 4 % w stosunku do naważki mąki. Jakość mąki pszennej oceniono na podstawie zawartości białka ogółem, wydajności glutenu i jego rozpływalności oraz wskaźnika sedymentacyjnego. W mące pszennej bez i z dodatkiem maltodekstryn wykonano oznaczenie liczby opadania. Próbki poddano również ocenie amylograficznej, farinograficznej i ekstensograficznej oraz wykonano laboratoryjny wypiek chleba metodą jednofazową. Użyte mąki pszenne cechowały się dobrą wartością wypiekową. Pod wpływem dodatku maltodekstryn obserwowano tendencję zmniejszenia maksymalnej lepkości kleików mącznych. Przyczyniały się one do zmniejszenia wodochłonności mąki oraz wydłużenia czasu rozwoju i stałości ciasta, co świadczyło o wzmocnieniu jego wytrzymałości na obróbkę mechaniczną. Dodatek maltodekstryn powodował także uplastycznienie ciasta wyrażające się zwiększeniem rozciągliwości oraz zmniejszeniem maksymalnego oporu na rozciąganie. Zastosowanie 1-4 % dodatku maltodekstryn do mąki pszennej, zwłaszcza maltodekstryn średnioscukrzonych do mąki typu 550 o niskiej aktywności amylolitycznej, spowodowało zwiększenie objętości pieczywa. Pod wpływem stosowanych dodatków maltodekstryn nie ulegała zmianom wydajność chleba. Obserwowano natomiast tendencję zmniejszania porowatości miękiszu. Celem przeprowadzonych badań była ocena wpływu mąki, otrąb i płatków owsianych na wartość wypiekową mieszanek żytnio-owsianych. Materiał badawczy stanowiły handlowa mąka żytnia typu 720 oraz mąka, otręby i płatki owsiane. Mąkę i otręby owsiane uzyskano z przemiału obłuszczonego handlowego ziarna owsa w młynie Quadrumat Junior (Brabender) (wydajność odpowiednio 44,5 i 55,5 %). Płatki owsiane rozdrobniono w laboratoryjnym młynku WŻ-1 (Sadkiewicz Instruments). Z mąki żytniej i produktów owsianych sporządzano mieszanki, w których udział produktu owsianego wynosił: 5, 10, 15 i 20 %. Próbkę kontrolną stanowiła mąka żytnia. Badania wykonano w trzech seriach. Wzrost udziału produktów owsianych w mieszance żytnio-owsianej powodował zwiększenie liczby opadania. Mieszanki zawierające mąkę owsianą miały nieznacznie wyższą końcową temperaturę kleikowania oraz niższą maksymalną lepkość kleiku niż mieszanki z otrębami i płatkami owsianymi. Udział produktów owsianych na poziomie 15 i 20 % powodował niewielki wzrost końcowej temperatury kleikowania i zmniejszenie maksymalnej lepkości kleiku w porównaniu z próbką kontrolną. Produkty owsiane, a szczególnie otręby, zwiększały wytrzymałość ciasta na obróbkę mechaniczną. Im większy był udział produktów owsianych, tym ciasto dłużej utrzymywało stałość i ulegało mniejszemu rozmiękczeniu. Chleby żytnie i żytnio-owsiane z udziałem produktów owsianych do 15 % miały podobną wydajność i objętość. Ich miękisz był bardzo elastyczny i charakteryzował się wyrównaną porowatością.
