Objetivo. Evaluar la calidad física, química y bacteriológica de las leches crudas acopiadas en cuatro empresas procesadoras de queso de la ciudad de Montería. Materiales y métodos. A los proveedores se les tomaron muestras de leche durante dos meses. Se usó estadística descriptiva y la comparación de los promedios se hizo mediante la prueba de Duncan todos los análisis se efectuaron mediante el uso el programa estadístico SAS. Resultados. La densidad de las muestras de leche fue de 1030 g/ml y el 77.9% de las muestras se halló dentro del rango de 1030 a 1033. El 63,25% de las muestras estuvieron dentro del intervalo de 0.13 a 0.17 y el porcentaje de proteína fue de 3.6%, con un valor mínimo de 2,6% y un máximo de 6%. La grasa fue del 3.70%, con un valor mínimo de 2.10% y un máximo de 7% y el promedio de los sólidos totales fue del 12.06%, con un valor mínimo de 9.10% y un máximo de 14.65%. Conclusiones. La composición promedio de la mayoría de las muestras de leche acopiadas por las cuatro empresas, cumplieron con lo establecido por el decreto 616 del 2006.
El objetivo fue evaluar la calidad fisicoquímica, microbiológica, recuento de células somáticas y presencia de inhibidores en leches crudas en el departamento de Sucre. Mediante un estudio descriptivo de corte transversal, se tomaron 150 muestras de leche cruda procedentes de seis centros de acopio o plantas procesadoras de tres subregiones del departamento de Sucre (Sabanas, San Jorge y Golfo del Morrosquillo). En cada centro de acopio se tomaron 25 muestras que correspondieron a 25 productores de las diferentes subregiones del departamento, para un total de 50 muestras por cada subregión. Se determinaron parámetros fisicoquímicos, microbiológicos y de sanidad de la ubre. Los datos obtenidos se analizaron de acuerdo a la normatividad vigente en Colombia. Los parámetros fisicoquímicos en su mayoría se hallaron dentro de los valores aceptados establecidos en el decreto 616 de 2006 y el decreto 1880 de 2011(proteína ≥2,9%, grasa ≥3,0%, densidad (15oC) ≥1.030, ST ≥11,30, SNG ≥8,30). El recuento de unidades formadoras de colonias (UFC/mL) en las diferentes subregiones fue mayor a 600.000. El recuento de células somáticas (RCS/mL) fue mayor a 500.000. En el 8% de las leches muestreadas se encontró presencia de inhibidores. Se encontró buena calidad fisicoquímica, sin embargo la calidad microbiológica y la sanidad de la ubre son deficientes, lo que requiere de implementación inmediata de programas para la obtención de leches de buena calidad higiénica.
Objetivo. Determinar la calidad fisicoquímica, microbiológica y recuento de células somáticas de leches crudas que se distribuyen para consumo humano en diferentes barrios de Sincelejo y Corozal (Sucre). Materiales y métodos. Mediante un estudio descriptivo de corte transversal, se tomaron 97 muestras de leche cruda; se determinaron algunos parámetros fisicoquímicos, microbiológicos y recuento de células somáticas. Los datos obtenidos se analizaron de acuerdo a la normatividad vigente en Colombia. Resultados. La mayoría de los parámetros fisicoquímicos de las muestras de leche cruda evaluadas se encontraron dentro de los parámetros normales de la legislación colombina. El recuento estándar en placa y el recuento de células somáticas se encontraron por encima de lo permitido por la legislación. Se demostró la presencia de coliformes totales, coliformes fecales, antibióticos y adulterantes como sacarosa y almidones. Conclusiones. La leche cruda que se distribuye para consumo humano en Sincelejo y Corozal presenta buena calidad fisicoquímica pero deficiente calidad microbiológica; se hace necesario incrementar la vigilancia y exigir al eslabón primario de la cadena láctea la producción de leche de excelente calidad.
Objetivo. Se estudió la diversidad genética de las poblaciones naturales de parásitos de Plasmodium vivax mediante el estudio de la región variable del gen Pvmsp-3α. Materiales y métodos. Se realizó PCR-RFLP en 29 muestras de pacientes con malaria por P. vivax con complicaciones (PC) y 32 pacientes con malaria por P. vivax sin complicaciones (PNC), todos los pacientes provenientes de la región Bajo-Córdoba-Uraba, zona altamente endémica para malaria. Fueron colectadas muestras de sangre total para la extracción de DNA utilizando la tecnica saponina/chelex-100. Se usó la tecnica de RFLP usando las enzimas de restricción HhAI y AluI. Diez patrones de restricción fácilmente distinguibles, se detectaron después que los productos de la PCR fueron digeridos con la enzima Alu I y 9 con la enzima Hha I. Resultados. El gen Pvmsp-3α exhibió gran polimorfismo y los resultados sugieren que este gen puede ser utilizado en Colombia como un marcador molecular epidemiológico para el genotipado de P. vivax, ademas el patron PH1con la enzima AluI mostró mayor frecencia en los pacientes complicados. Conclusiones. El gen Pvmsp3α puede ser un marcador genetico de variabilidad en las cepas circulantes de P. vivax y el PH1 sugiere ser un marcador para predecir una complicación en pacientes con malaria vivax.
La leptospirosis es una zoonosis de distribución mundial, que causa grandes pérdidas económicas en animales de interés zootécnico y de impacto en salud pública. Objetivo. Determinar la presencia de L. interrogans sensu lato en orina de bovinos y en fuentes de aguas en zonas rurales de Ciénaga de Oro, Córdoba (Colombia). Materiales y métodos. Se tomaron 78 muestras de orina de vacas y 39 muestras de agua para cultivo bacteriológico y la determinación del gen 16S rRNA de L. interrogans sensu lato. Resultados. Aunque no se logró el islamiento, se detectó por PCR L. interrogans sensu lato en tres orinas y en una muestra de aguas residuales. La determinación por PCR permitió confirmar la circulación de L. interrogans sensu lato. Conclusiones. Estas evidencias moleculares permiten inferir que en las zonas rurales de Ciénaga de Oro hay circulación activa de L. interrogans sensu lato en bovinos y fuentes de aguas.
