The objective of the work was to develop a 70% cocoa chocolate containing ursolic and oleanolic acids isolated from Mansoa hirsuta DC and to evaluate the effects of its consumption on the health of individuals. Physical-chemical, microbiological and sensorial analyzes were made in the chocolates. On order to evaluate the health of individuals, a clinical trial was conducted with the developed chocolate, in which 45 volunteers, during 04 weeks, were divided into three groups: a test group, a placebo group and a control group. The individuals were submitted to laboratory and anthropometric tests on two occasions, before and after the clinical trial weeks. The analyzes revealed that the developed chocolate presented physical-chemical and microbiological characteristics within the standards accepted for bitter chocolate and presented good sensorial acceptance. The results of the clinical trial showed that the volunteers presented reduction in the anthropometric measurements and changes in the laboratory tests.Practical Application: Functional chocolate contributes to increasing the quality of health and the well-being of consumers.
ResumoO uso de medicamentos antidepressivos tem aumentado alarmantemente na sociedade, vale ressaltar que alguns medicamentos quando utilizados de forma crônica e/ou associados pode acarretar em alterações no paladar. O paladar fornece informações indispensáveis sobre os alimentos, evitando, por exemplo, a ingestão de alimentos não aptos para o consumo. Nesse contexto, o presente estudo objetivou verificar a sensibilidade gustativa, para os gostos doce e salgado, em usuários de medicamentos antidepressivos. A pesquisa foi realizada com 80 indivíduos, sendo 40 usuários de medicamentos antidepressivos e os outros não usuários de antidepressivos. No grupo teste foi aplicado um questionário estruturado socidemográficos e estilo de vida, realizado avaliação nutricional e análise do prontuário sobre o uso de medicamentos. A avaliação da sensibilidade gustativa foi realizada pelo teste de limite de percepção, ou seja, método rápido do tipo 3-Alternative Forced Choice para o grupo teste e controle. Observou-se que o limite de percepção dos gostos doce e salgado estão aumentados nos usuários de medicamentos antidepressivos quando comparados ao grupo controle, apresentando diferença significante (p>0,05) entre os índices limiares dos grupos. Logo, notou-se que os usuários de medicamentos antidepressivos, pela determinação do índice limiar, possuem uma menor sensibilidade gustativa aos gostos doce e salgado. Palavras AbstractThe use of antidepressant drugs has increased alarmingly in society, it is noteworthy that some drugs when used chronically and / or associated with other drugs may result in changes in taste. The palate provides essential information about the food, avoiding, for example, the intake of food unfit for consumption. In this context, this study aimed to verify the taste sensitivity users of antidepressant medications, measuring the threshold index for sweet and salty tastes. The survey was conducted with 80 individuals, 40 users of antidepressant medications and other nonusers of antidepressants. In the study group, we applied a structured sociodemographic and lifestyle questionnaire, conducted a nutritional assessment, and analyzed the medical records concerning medication use. The evaluation of sensitivity was performed by the taste perception threshold test, i.e., the rapid method of type-3 Alternative Forced Choice for the test and control group. It was observed that the perception of sweet and salty tastes limits are increased in users of antidepressant drugs compared to the control group, showing significant difference between the threshold levels of the groups. Therefore, it was noted that users of antidepressant medications by determining the threshold index, have a lower sensitivity to taste sweet and salty tastes.
The objective of this study was to use the passion fruit peel P. cincinnata Mast., as a viable alternative to produce food (flour and cookies) that is rich in fiber and environmentally sustainable. For this, fruit peels were obtained, which were hygienized, dehydrated and ground in a knife mill in order to develop the flour, which was then used in different concentrations in three formulations of chip cookies (using 10%, 20% and 30% of the flour developed). Analyzes physicochemical and microbiological composition were performed for both flour and for the cookies developed and a sensorial acceptance test was performed for the cookies. It was possible to observe that the flour had an adequate centesimal composition, when it was about quality and safety, as well as health benefits. As for the physicochemical composition, the flour had 5.79 ± 0.11% of ashes; 78.23 ± 0.84% of total carbohydrates; 5.78 ± 0.11% moisture; 4.83 ± 0.00% acidity; 3.74 ± 0.04 pH; 1.66 ± 0.06% lipids; 8.59 ± 0.82% protein and 58,3 g/100g dietary fiber. The study demonstrates its nutritional quality by reducing the lipid content of the final product, by comparing the formulation with 30% of the flour developed to the standard formulation, as well as increasing the ash content and acidity and reducing its pH when compared to the standard formulation, promoting the safety and quality of food. Flour presented promising capacity in the development of functional foods, health promoters, and environmental conservation by avoiding its inappropriate disposal.
O objetivo desse estudo foi avaliar as principais mudanças alimentares ocorridas entre universitários brasileiros durante a pandemia do COVID-19. Estudo transversal com 946 universitários de ambos os sexos e com 18 anos ou mais. Os dados foram coletados por meio de questionário fechado online. Para analisar a associação entre as mudanças dietéticas e os principais determinantes sociais, econômicos e nutricionais, foram utilizadas razões de prevalência brutas e ajustadas e o modelo de regressão multivariada de Poisson. A maioria dos participantes (88,8%) estava matriculada em universidade pública, 74,4% relataram alteração de peso, 21,8% índice de massa corporal inadequado e 37,8% considerável prevalência de sedentarismo no período de distanciamento social e aumento da ingestão de alimentos ultraprocessados e fast food, devido a diversos fatores. O distanciamento social imposto pela pandemia COVID-19 alterou negativamente os hábitos de vida dos estudantes, que passaram a adotar hábitos alimentares de risco, impactando na percepção de peso deste grupo. Além disso, foi possível identificar que universitários solteiros, praticantes de atividade física e que se perceberam com aumento de peso tiveram maior probabilidade de aderir às mudanças alimentares consideradas de risco para a saúde.
