O estudo teve a finalidade de avaliar características físico-químicas, sensoriais e a ação antimicrobiana do óleo essencial de orégano em ricota durante o seu armazenamento. Foram produzidas três amostras de ricota, Controle (sem adição de óleo essencial de orégano), AII (Adição de 0,001%) e AI (adição de 0,002%). Logo após a fabricação, aplicou-se teste de escala hedônica para os atributos cor, sabor, textura, odor e avaliação global. Realizou-se também, análise físico-química de teor de água, gordura total, cinzas, proteína e carboidratos. Os dados foram submetidos à ANOVA e teste de Tukey (p<0,05). As amostras foram analisadas microbiologicamente (Staphylococcus coagulase positiva, aeróbios mesófilos, psicrotróficos, coliformes e a presença de salmonella) nos tempos 0, 5, 10 e 15 dias. As contagens para os microorganismos Staphylococcus coagulase positiva, aeróbios mesófilos, psicrotróficos, coliformes e a ausência de salmonella encontraram-se dentro dos limites estabelecidos pela legislação. As baixas contagens demonstram condições de higiene satisfatórias, assim como armazenamento correto. Os índices de aceitação foram satisfatórios, sendo maior que 70 % em todas as concentrações, o que permite concluir, que a inserção dos queijos no mercado consumidor é viável, nas concentrações avaliadas.
