Considerando-se a atual situação epidemiológica do Brasil em que a obesidade e as doenças crônico-degenerativas (doenças cardiovasculares, diabetes mellitus e câncer) passam a ser destaque em saúde pública, parece prudente a preocupação quanto à caracterização química dos alimentos regionais com potencial econômico e nutricional, em especial os de baixo teor calórico, como o palmito. Sendo assim, determinou-se a composição centesimal, fitato e elementos minerais (macro e micro) no palmito de pupunheira in natura e cozido. O palmito de pupunheira utilizado foi o da raça Pampa Hermosa, da Estação Experimental de Fruticultura da Coordenação de Pesquisas em Ciências Agronômicas (CPCA) do Instituto Nacional de Pesquisas da Amazônia (INPA), em Manaus (AM), coletado no período chuvoso, em janeiro de 1995. Tomou-se aleatoriamente 3,5 kg de palmito de 110 progênies de pupunha inerme, com 2 anos de idade, por ocasião do primeiro corte. As palmeiras foram cultivadas em Latossolo Amarelo, isento de adubação. As análises químicas foram efetuadas no Laboratório de Nutrição e Físico-Química dos Alimentos do INPA e IPEN-CNEN. De acordo com os resultados obtidos, verificou-se que o palmito, in natura e cozido, apresentou em 100g da parte comestível respectivamente, alto teor de umidade, em torno de 90%; 1,5 g de proteínas; baixo teor de lipídio (0,3 e 0,2 g) e; concentrações importantes de fibra alimentar (3,8 e 2,2 g). Em relação aos elementos minerais nutricionalmente importantes sobressairam, também em 100g da parte comestível, K (194,0 mg; 128,0 mg); Ca (42,4 mg ; 42,9 mg); Mg (3,4 mg; 2,2 mg); Fe (237,7 µg; 265,2 µg), Se (2,1 µg; 2,8 µg), respectivamente no palmito in natura e cozido. Dos elementos minerais não essenciais na alimentação, destacaram-se o bromo (830,4 ±5,8 µg%; 434±5,8 µg%) e o rubídio (315,2±3,2 µg%; 433,5±34,0 µg%) respectivamente para palmito in natura e cozido. A concentração de fitato (hexafosfato de mioinositol) foi de 554,7 mg% para o palmito in natura e 379,1 mg%, para o palmito cozido. Apesar do palmito ser um alimento dietético sob o ponto de vista nutricional, devido à baixa concentração em calorias e à presença de fibra, o mesmo pode contribuir no aporte de minerais essenciais na alimentação da população Amazônica.
The percent composition, soluble and insoluble food fibers, oil fatty acids and minerals were determined in the mesocarp of fruits of three peach palm (Bactris gasipaes Kunth) populations grown in Central Amazonia, Brazil. Amino acids were also determined in one of the populations. The mean protein levels ranged from 1.8 to 2.7%, lipid levels ranged from 3.5 to 11.1%, the nitrogen free fraction ranged from 24.3 to 35%, food fiber ranged from 5.2% to 8.7%, and energy ranged from 179.1 to 207.4 kcal%. All essential, as well as non-essential, amino acids were present, with tryptophan and methionine presenting the lowest mean concentrations. The mono-unsaturated oleic acid predominated in the oil, ranging from 42.8 to 60.8%, and palmitic acid was the most abundant saturated fatty acid, ranging from 24.1 to 42.3%. Among the essential fatty acids, linoleic acid was the most abundant, with a maximum of 5.4% in Pampa-8. The most important mineral elements were potassium, selenium and chromium, respectively corresponding to 12%, 9% and 9% of daily recommended allowances. Considering the nutritional potential of the fruit, we suggest its more frequent incorporation into the diet of the Amazonian population.
Considerando a ampla variabilidade genética de cubiu (Solanum sessiliflorum Dunal), quantificaram-se os macro e micronutrientes, objetivando a ampliação da tabela de composição química de alimentos típicos da região amazônica. Os frutos provenientes da Estação Experimental de Hortaliças Alejo von der Pahlen (EEH) do Instituto Nacional de Pesquisas da Amazônia (INPA), localizados no km 14 da Rodovia AM 010 em Manaus, AM, foram processados no Laboratório de Alimentos e Nutrição do INPA. Avaliaram-se oito etnovariedades de cubiu identificados como: 2 I, 3 I, 6, 7, 12, 14, 17, 29 I e III em estádio de maturação comercial. Os teores de elementos minerais foram quantificados pela técnica de Ativação por Nêutrons Instrumental e a fibra alimentar pelo método enzímico-gravimétrico. Os resultados demonstram ser o cubiu um fruto com baixo conteúdo energético (média de 33 kcal), com conteúdo de fibra alimentar total na ordem de 1,6%. Em relação aos macros elementos minerais, a etnovariedade 6, apresentou a maior concentração em potássio (513,5±3,1mg), cálcio (18,9±0,6mg) e a etnovariedade 2 I em Fe (564,4±58,1µg) e Cr (99,3±8,3µg). A menor concentração foi constatada na etnovariedade 12 para os elementos K (229,0±4,5mg), Na (53,7±5,5µg) e Zn (89,3±4,7µg). Apesar das variações em relação as diferentes etno variedades e conseqüentemente concentrações em elementos minerais, o cubiu, pode estar contribuindo para atingir as recomendações desses nutrientes. Macro and micro nutrients quantification of some cubiu ethnovarieties (Solanum sessiliflorum Dunal)ABSTRACT Considering the wide genetic variability of cubiu (Solanum sessiliflorum Dunal), its chemical composition was quantified in order to contribute to the chemical composition table of typical Amazonian foods. The cubiu fruit was collected at Alejo von der Pahlen (EEH) experimental station from National Research Institute of Amazonia (INPA). Eight ethno varieties of cubiu identified as 2 I, 3 I, 6, 7, 12, 14, 17, 29 I and III were analyzed. All samples used were ripe. The mineral content was determined by Neutron Activation Analysis technique and alimentary fiber by the enzymatic-gravimetric method. The results showed that cubiu is a hypo caloric food source (mean of 33 kcal and total fiber of about 1.6%). Regarding macronutrients, ethnovariety 6 showed high potassium (513.5 ± 3.1 mg) and calcium (18.8 ± 0.6 mg) concentration. Ethnovariety 21, had high Fe (564 ± 58 µg) and Cr (99 ± 8 µg) concentrations. Low concentrations of K (229.0 ± 4.5 mg), Na (53.7 ± 5.5 µg) and Zn (89.3 ± 4.7 µg) were found for ethnovariety 12. Although the cubiu fruit presents great variation of its mineral contents due to different ethnovarieties, it could still contribute as a diet supplement to reach the minimum nutrient requirements for the Amazonian population.
Determinou-se os constituintes nutricionais da alimentação de pré-escolares de uma creche de Manaus, AM, seguida da adequação da mesma. Foi realizada a coleta da alimentação (desjejum, almoço e lanches), por meio da porção em duplicata, e analisada quimicamente. Os alimentos frequentemente consumidos foram feijão (25,1%), leite com café (19.9%), chá/sucos/refrigerantes (13,9%) e arroz (10,3%). A adequação protéica e energética foram de 126,1% e 32,42%, considerando as necessidades para as faixas etárias de 1 a 3 anos e 84% e 23,4% para o intervalo de 4 a 6. A quantidade de fibra total encontrada na dieta analisada foi baixa (5,6 g/dia). A adequação de consumo de Cu (431.8% c 293.6%) c Na (512% e 384%), considerando as faixas de 1 a 3 anos e 4 a 6 anos, respectivamente. Ca, Zn e Fe foram limitantes, com adequação inferior a 50%.
