This work aimed a sensory characteristics of structured guava elaborated with hydrocolloids agar and combinations of LA and HA gellan. The methods used were Optimized Descriptive Profile (ODP), CATA and Sensory Acceptance Tests. For the ODP, 18 semi-trained judges selected 12 sensory attributes and evaluated the samples using 9 cm unstructured scales. Sensory acceptance and CATA tests were performed by 100 untrained panelists. Sensory tests expressed medium acceptability indexes and similar results for all samples. The highest frequency CATA attributes were Homogeneous, Brightness, Pinkish red color, Guava aroma and Sour taste. The characteristics from ODP were Brightness, Sweet taste, Sour taste, Guava flavor, Firm and Sandy texture. Comparing the three methods, in the CATA and sensory acceptance, tasters did not identify differences between the samples in relation to the type of hydrocolloid, but with the ODP method they could achieve this.
O gelano é um hidrocoloide que confere propriedades gelificantes e espessantes, proporcionando a formação de estruturados de frutas. O murici (Byrsonima crassifolia (L.) Kunth) é uma fruta nativa da biodiversidade brasileira, com sabor sui generis e com período de safra definido. Com o propósito de garantir o consumo desse fruto o ano todo e conferir mais uma alternativa de produto, além dos sucos e geleias, objetivou-se elaborar e caracterizar físico-quimicamente um estruturado a base de gelano. Foram elaboradas 4 formulações, contendo 40 mL de polpa de murici, 10mL de mel e percentuais de gelano diferenciados: 0,25; 0,5 0,75 e 1,0%, F1, F2, F3 e F4, respectivamente. Parâmetros físico-químicos avaliados foram: pH, ºBrix, atividade de água e vitamina C. Todas as formulações apresentaram baixo valor de pH (<3,5) e alta atividade de água (Aw > 0,9); entretanto, apenas a F1 apresentou valor de SST alto (9,33 ºBrix). O teor de vitamina C variou entre 16,72 a 19,81 mg.100g-1. A tonalidade cromática das amostras foi alta (h > 70); valores de luminosidade foram 48,31, 51,34, 52,56 e 51,75, respectivamente em F1, F2, F3 e F4; a intensidade a* (vermelho ao verde) variou entre as amostras de 6,87 a 7,82; b* (amarelo a azul) entre 31,47 a 39,67; e c* (croma) entre 32,21 a 40,43. O estruturado de murici apresentou estabilidade comercial, devido ao seu baixo pH e com conteúdo de vitamina C.
Os resíduos provenientes do processamento de frutas são amplamente estudados por se tratarem de um material rico em componentes nutricionais que poderia ser utilizado na alimentação humana. Uma alternativa para o aproveitamento desses resíduos é a obtenção de farinha. No entanto, algumas dessas farinhas, embora fonte de minerais e outros nutrientes, podem conter substancias tóxicas a saúde humana, como os fatores antinutricionais, os quais afetariam negativamente a biodisponibilidade de nutrientes requeridos pelo corpo. Oxalato, por exemplo, liga-se ao cálcio para formar complexos. Tais sustâncias diminuem a biodisponibilidade de nutrientes requeridos pelo corpo. Assim, o presente trabalho avaliou os teores de oxalato em amostras de farinhas proveniente de resíduos do processamento de acerola (Malpighia glabra), manga (Mangifera indica L) e cajá (Spondias mombin). As amostras de resíduos do processamento investigadas foram desidratadas e trituradas para obtenção das farinhas. O teor de oxalato total foi determinado por permanganimetria. Para o teste de bioacessibilidade foi empregado um processo de digestão gastrointestinal simulada in vitro, que consistiu na simulação da digestão gastrointestinal com pepsina solubilizada em HCl 0,1 mol/L durante a fase gástrica e sais de bile-pancreatina, solubilizada com NaHCO3 0,1 mol/L na fase intestinal. Os resultados encontrados mostraram que o teor de oxalato cresceu na ordem: manga > acerola > cajá, indicando que as farinhas analisadas têm características físico-químicas favoráveis a comercialização, uma vez que apresentam baixos teores de oxalato, insuficiente para influenciar na disponibilidade do cálcio no organismo humano e causar alterações indesejadas no seu funcionamento.
