Na manipulação de diversos alimentos pode ocorrer contaminação devido à forma irregular no manuseio dos utensílios, aumentando o risco da transmissão de microrganismos de um alimento para o outro, na maioria dos casos a contaminação ocorre pela inadequada higienização. As tábuas de corte na cozinha são bastante utilizadas, e esse utensílio, com o acúmulo de cortes, reentrâncias e orifícios, tornam-se um local hospitaleiro para a proliferação de microrganismos; as tábuas de vidro, plástico e madeira, são as mais utilizadas, porém a que possui maior risco de contaminação é a de madeira. Esta pesquisa tem como objetivo identificar o nível de contaminação por microrganismos em de tábuas de corte e o tipo mais adequado para a utilização de forma segura. O presente artigo foi desenvolvido por meio de uma revisão integrativa em artigos científicos encontrados nas bases de dados eletrônicas, Google Acadêmico, PubMed e SciELO que abordaram a análise microbiológica de tábuas de corte. Os resultados das pesquisas apresentaram a prevalência de microrganismos aeróbios mesófilos, leveduras, fungos e bactérias da família Enterobacteriaceae. Para prevenção de contaminações cruzadas nos alimentos, é indicado o uso de tábuas de polietileno coloridas, onde cada cor é designada para o preparo de um único tipo de alimento, além de, não negligenciar a limpeza antes e após o uso dos utensílios.
Opened to the public at the end of 2015, the exhibition Picture Gallery in Transformation at the São Paulo Museum of Art (MASP) has as its concept the resumption of the display model conceived in 1968 by the Italian-Brazilian architect Lina Bo Bardi (1914–1992).[1] Comprising glass easels held by concrete blocks irregularly installed in the museum’s second-floor gallery, her expography played with the transparency and the permeability of its devices, rejecting a unidirectional pathway that would guide the audience through the museum space. This installation followed the principles of the display the architect had conceived in 1947 for the previous MASP venue. These included the separation of the works from the walls, the refusal of chronology, and hierarchical associations between objects. “The collection is not displayed according to a chronological criterion; it is presented with the aim of producing a shock that awakens the [audience’s] curiosity and investigative skills,” said Bo Bardi at the time.
O presente artigo toma como base a questão do “retorno à África” a fim de tecer uma leitura sobre um conjunto de obras produzidas por artistas visuais da diáspora negra – entre os quais, Chester Higgins Jr., Ayrson Heráclito, Carrie Mae Weems e Maria Magdalena Campos Pons – que desembarcaram no Senegal e encontraram na Ilha Gorée um dos pontos culminantes de suas jornadas em solo africano. Para tanto, analiso como o emprego de certos recursos narrativos – tais como a contemplação do passado, a continuidade histórica, e a expurgação ritualística – ensaiam um retorno metafórico a esse lugar de memória. Ao longo do texto, demonstrarei ainda como as imagens gestadas nesses ensaios visuais se relacionam com os processos de patrimonialização de Gorée, perturbando a historiografia acerca da escravidão sem, contudo, invalidá-la.
