O trabalho teve como objetivo caracterizar a sintomatologia visual e o crescimento e teor de nutrientes na parte aérea e no sistema radicular de mudas de Tectona grandis, transferidas para soluções nutritivas com exclusão de macronutrientes. As mudas foram produzidas em substrato comercial, onde permaneceram por quatro meses, sendo depois transferidas para rizotrons, em que foram submetidas, por 30 dias, à solução nutritiva completa e soluções preparadas com a supressão de N, P, K, Ca, Mg e S. O delineamento foi inteiramente casualizado, com cinco repetições. As soluções foram renovadas a cada duas semanas e o volume, completado diariamente com água desionizada, mantendo-se o pH em torno de 5,5 + 0,5. O desenvolvimento inicial de mudas de Tectona grandis foi afetado pela omissão de todos os macronutrientes, sendo os sintomas condizentes com o padrão apresentado pela maioria das culturas. Os danos mais intensos e imediatos foram observados na ausência de N e Ca, causando, inclusive, apodrecimento das raízes secundárias e paralisação na emissão de novas raízes. Os teores nutricionais da parte aérea e sistema radicular das mudas submetidas à solução completa foram, respectivamente: 38,0 e 26,9 g kg-1 de N; 8,5 e 4,0 g kg-1 de P; 22,8 e 13,1 g kg-1 de K; 2,3 e 3,7 g kg-1 de S; 10,5 e 2,0 g kg-1 de Ca; 3,0 e 1,7 g kg-1 de Mg; 175,2 mg kg-1 e 3,6 g kg-1 de Fe; 23,1 e 48,1 mg kg-1 de Zn; 4,3 e 17,8 mg kg-1 de Cu; e 142,5 e 389,8 mg kg-1 de Mn.
A demanda por alimentos processados que mantenham suas características as mais próximas possíveis dos produtos originais tem aumentado sensivelmente nas duas últimas dé-cadas. No que se refere ao processamento industrial, seja em grande ou pequena escala, há a necessidade de desenvolver tecnologias que contribuam para minimizar os efeitos adversos provocados nos alimentos pelo processamento, de forma a atender a crescente exigência por produtos de melhor qualidade por parte dos consumidores. Esse é o caso das frutas desidratadas utilizadas para consumo imediato ou como ingredientes na formulação de diversos tipos de alimentos, tais como em produtos de confeitaria, sorvetes, sobremesas congeladas, saladas de frutas e iogurtes. Em todos esses casos é desejável que os ingredientes mantenham a cor, o aroma e o sabor o mais pró-ximo da fruta in natura, preferencialmente sem a utilização de aditivos, e proporcionando uma textura agradável ao alimento depois do processamento. A associação de operações e processos adequados durante a fabricação de determinado alimento pode garantir a manutenção dessas qualidades no produto final (TORREGIANNI; BERTOLO, 2001). Na maioria dos casos, o objetivo da combinação de mé-todos de preservação durante o processamento de alimentos é conseguir que as alterações nas propriedades originais da matéria-prima ocorram de forma controlada, possibilitando o aumento da vida útil do produto. Essas combinações de proces- AbstractThe effect of glucose and invert sugar impregnation on the convective drying rate of pineapple and the suitability of nine mathematical models to describe the drying curves were investigated. Tests were conducted using fresh pineapple rings and samples which were pre-treated by osmotic dehydration in sucrose solutions (0.40, 0.44, and 0.47 g mL -1 ) and in invert sugar syrup. Osmotic pre-treatments were performed at 40 and 50 °C for 2 hours at 60 min -1 . The convective drying was performed in a tray cabinet dryer using heated ambient air at 60 °C and 1.25 m.s -1 . The adjustment levels of the models were based on the correlation coefficient, the root mean square error, mean absolute percentage error, and residual plot analysis. The highest rates of convective drying were obtained for the fresh samples. In the osmotically pre-treated fruits, with both temperatures, an increase in the solution concentration was followed by a decrease in the convective drying rate. RESUMO -O experimento foi realizado com objetivo de avaliar a qualidade fisiológica das sementes de carambola secadas por convecção a 38 ºC, por meio do teste de germinação em rolo de papel com duração de 84 dias. Avaliou-se, também, o potencial de armazenamento empregando-se dois tipos de embalagem, permeável e impermeável, sob duas condições de estocagem, ambiente a 25 ºC e 61% de umidade relativa e câmara a 10 ºC e 82% de umidade relativa, ao longo de 90 e 180 dias. Obteve-se germinação média de 87% para sementes recém-retiradas dos frutos. Os resultados revelaram que as sementes podem ser armazenadas em embalagem impermeável a vácuo, sem redução do poder germinativo, por 90 ou 180 dias a 10 ºC, e por 90 dias em condição do ambiente. As sementes podem, também, ser armazenadas por 90 dias, sob refrigeração, em embalagem permeável. Independentemente do período e da temperatura de armazenamento, o vigor estimado pelo índice de velocidade de germinação (IVG) e pelo tempo médio de germinação (t médio ), é consistentemente superior para as sementes estocadas em embalagens impermeáveis a vácuo.Termos para indexação: Averrhoa carambola; germinação, índices de vigor, embalagem. PHYSIOLOGICAL QUALITY AND STORABILITY OF CARAMBOLA SEEDSABSTRACT -This study was conducted to determine the physiological quality of carambola seeds convectively dried at 38 ºC, at the end of germination tests in paper rolls and lasting 84 days. Seed storability using two types of packaging, water vapour permeable and impermeable, under two storage conditions, ambient at 25 ºC and 61% relative humidity, and inside a 10 ºC refrigerated chamber with relative humidity of 82%, was also assessed for periods of 90 and 180 days. Mean germination percentage of fresh seeds was 87%. The results obtained through germination testing showed that carambola seeds can be stored for 90 or 180 days at 10 ºC, or for 90 days at ambient conditions, in vacuum-sealed packaging, without impairing their physiological quality. Seeds may also be stored for 90 days in water vapour-permeable packaging under refrigeration. Vigour estimated through the germination speed index and the mean time of germination was consistently higher for seeds stored in vacuum-sealed packaging, irrespective of storage time and temperature.
Propôs-se, neste trabalho, avaliar a cinética da desidratação osmótica de fatias de frutos de duas cultivares de abacaxi, Pérola e Smooth Cayenne, em xarope de açúcar líquido invertido sem diluição. Empregaram-se dois níveis de temperatura da solução de desidratação, 40 e 50 ºC, dois níveis de agitação, zero e 60 min-1, tempo de imersão de 2 h e a relação fruta:xarope de 1:10. Verificou-se que a relação fruta:xarope usada, foi suficiente para manter inalterada a concentração da solução osmótica ao longo da desidratação. Houve aumento de cerca de três vezes no teor de sólidos solúveis totais das fatias de abacaxi, não se observando diferenças em função da cultivar e da temperatura de desidratação; observou-se, também, que a redução de massa, a perda de água e o ganho de sólidos, foram maiores para amostras da cultivar Pérola que para aquelas da cultivar Smooth Cayenne.
