Nas últimas décadas tem aumentado o número de pessoas que fazem refeições fora de casa e com base nisso houve um aumento no crescimento do mercado alimentício. Com isso, há uma maior necessidade da implantação de locais fornecedores de refeições saudáveis de modo que garanta maior qualidade nutricional, sensorial e higiênicosanitária em toda cadeia de produção até a entrega do produto final. O presente estudo teve como objetivo avaliar a composição nutricional das marmitas oferecidas por uma Unidade de Alimentação e Nutrição e comparar se os valores estão de acordo com as recomendações preconizadas pelo Programa de Alimentação do Trabalhador (PAT). Para determinação da composição nutricional foram utilizados os cálculos das fichas técnicas que foram elaboradas em planilha eletrônica a partir das informações coletadas no local e das informações nutricionais disponibilizadas na TACO. Os cardápios analisados durante a pesquisa mostraram ter uma média de teor calórico de 964 calorias no almoço dos comensais estando as calorias dos cinco dias analisados de acordo com o intervalo preconizado. Todos os dias apresentaram elevada quantidade de proteína e sódio além disso houve um aumento de carboidrato, lipídio e fibras nos dois primeiros dias, em contrapartida, no terceiro, quarto e quinto dia mostrou ter uma oferta de carboidratos muito abaixo, porém nestes dias as fibras obtiveram-se dentro do ideal conforme o determinado pela legislação vigente. Concluiu-se que nos dias analisados na UAN, as refeições enviadas obtiveram resultados insatisfatórios no teor de sódio, carboidratos, lipídios e proteínas que excederam as recomendações, porém o teor energético de todos os dias analisados apresentou concordância com o estabelecido pela literatura.
