ABSTRAKIsi perut merupakan hasil samping pengasapan ikan patin (Pangasius hypophthalmus) yang jumlahnya mencapai 5-6%/hari dari jumlah ikan yang diasap. Jumlah hasil samping yang besar tersebut apabila tidak diolah dapat mencemari lingkungan. Masyarakat pengolah di Kabupaten Kampar, Riau telah mengekstraksi isi perut tersebut menjadi minyak ikan kasar dengan produksi 110 L/hari. Untuk itu diperlukan teknologi pemurnian yang dapat meningkatkan nilai ekonomi minyak ikan kasar yang ada. Penelitian ini bertujuan melakukan pemurnian minyak kasar hasil samping pengasapan ikan patin dengan menggunakan empat metode pemurnian. Masing-masing metode pemurnian tersebut memiliki perbedaan seperti konsentrasi bentonit, waktu dan suhu proses, konsentrasi NaOH pada proses netralisasi, dan penggunaan asam sitrat atau natrium klorida pada proses degumming. Bahan penelitian yang digunakan adalah dua jenis minyak ikan patin kasar yaitu hasil ekstraksi isi perut ikan patin dengan pengukusan dan hasil ekstraksi dengan pemanasan. Sebelum dan setelah dimurnikan, minyak ikan dianalisis bilangan asam lemak bebas, bilangan peroksida, bilangan iodin, warna, dan profil asam lemak. Hasil penelitian menunjukkan bahwa pada minyak ikan hasil ekstraksi dengan pengukusan yang dimurnikan menggunakan metode I, terjadi penurunan nilai asam lemak bebas sebesar 50,79%; peroksida sebesar 23,75%; dan peningkatan angka iodin 20,99%. Sedangkan pada minyak ikan hasil ekstraksi dengan pemanasan yang telah dimurnikan menggunakan metode II terjadi penurunan nilai asam lemak bebas sebesar 50,30%; peroksida 49,77%; dan peningkatan angka iodin 30,92% Pemurnian minyak ikan patin terbaik dihasilkan dari minyak hasil ekstraksi dengan pengukusan yang dimurnikan dengan metode I dan minyak hasil ekstraksi dengan pemanasan yang dimurnikan dengan metode II karena telah memenuhi standar yang ditetapkan oleh International Association of Fish Meal Manufactures, International Fish Oil Standard, dan standar farmakope Indonesia sebagai minyak ikan mutu pangan. Penelitian pemanfaatan limbah padat karaginan sebagai bahan baku selulosa telah dilakukan untuk mencari bahan baku alternatif pembuatan selulosa. Percobaan dilakukan dengan alkalinasi limbah karaginan menggunakan larutan NaOH dan pemucatan menggunakan larutan H2O2 Alkalinasi dilakukan dengan variasi konsentrasi larutan NaOH 20; 30; 40% dan pemucatan dengan larutan H2O2 2:4 dan 6%. Perbandingan antara limbah dan larutan NaOH adalah 1:12 (b/v) dan perbandingan antara limbah dan larutan H2O2 adalah 1: 30 (b/v). Dari hasil penelitian ini diketahui bahwa perlakuan terbaik adalah alkalinasi menggunakan NaOH 20% dan H2O2 6% yang menghasilkan alfa selulosa 71,38%; kadar air 10,4% dan kadar abu 10,69% dengan nilai derajat putih 17,8% .
The use of fish oil is still not optimal whether it is crude or refined fish oil. One of the alternative uses is processing it into food ingredients or as an ingredient for food product enrichment. The purpose of this study was to evaluate the effect of the combination of catfish oil and vegetable oil on the characteristics of margarine. Refined catfish oil was analyzed for peroxide content, free fatty acids, iodine number, and saponification number. Margarine products are made with the main ingredient of stearin and a mixture of refined catfish oil and corn oil with a ratio of 100: 0; 75:25 and 50:50. The analysis carried out included proximate, peroxide value, color, sensory and microbiology. The results showed that refined catfish oil had a peroxide value of 1.74%, free fatty acids 0.21%, Iodine value 50.48% and saponification value 102.10%. Based on the quality characteristics of margarine, the treatment with a ratio of 50:50 has the best result with a moisture content of 9.03%, 78% fat content, 1.75% peroxide value and have a bright yellow color, conform the margarine standard SNI 01-3541-2002. The results of the analysis of total plate count (ALT) ranged from 1.0x101 to 4.0x101, Stapphylococcus aureus showed that the colony did not grow up to 4.0 X 101. The hedonic test results for the color, taste and aroma of the margarine, panelists preferred the fish oil concentration 50:50 while the panelists preferred margarine with the addition of fish oil 75:25 for the texture.
Halimeda opuntia merupakan rumput laut Chlorophyta berkapur yang memiliki kandungan nutrisi untuk pangan fungsional. Namun, pergeseran komposisi nutrisi dapat terjadi akibat perubahan lingkungan akibat limpasan nutrien dan bahan organik lainnya yang umum terjadi di perairan pesisir Indonesia. Penelitian ini bertujuan untuk melakukan identifikasi pergeseran kandungan nutrisi H. opuntia yang tumbuh di zona intertidal agar dapat digunakan sebagai dasar pemilihan lokasi pengambilan bahan baku H. opuntia untuk produk fungsional. Pengambilan sampel dilakukan di empat lokasi perairan di Indonesia, yaitu perairan Binuangeun (Banten), Lampung Selatan, Lombok Timur (Nusa Tenggara Barat) dan Konawe Selatan (Sulawesi Tenggara). Karakteristik nutrisi dari rumput laut target meliputi kadar air, abu, protein, lemak, karbohidrat, dan serat kasar. Informasi lingkungan dari habitat sampel ditunjukkan melalui variabel kimia air yaitu DO, pH, salinitas, pCO2, kalsium aragonit, nitrogen anorganik terlarut, serta fosfat anorganik terlarut. Hasil analisis menunjukkan kondisi lingkungan eutrofik berpengaruh secara signifikan terhadap komposisi nutrisi H. opuntia. pH dan salinitas menjadi faktor determinan positif (R2 = 0,75 pada p<0,05) terhadap kadar karbohidrat, sementara nitrogen anorganik terlarut menjadi faktor determinan negatif terhadap kadar protein dan lemak (R2= 0,81 dan 0,61 pada p<0,05). Berdasarkan kandungan nutrisinya, maka H. opuntia yang diperoleh dari habitat alamiah merupakan bahan baku produk fungsional yang lebih baik dibandingkan dengan biota selaras dari perairan eutrofik.
