The use of egg in food formulation affects the characteristic of product. In this research, snack bar was made of banana flour and puree. The effect of egg addition, that were 0% as control, 5%, 9%, 13% and 17% on proximate, water activity (aw) and textural properties of the snack bar was evaluated. Results indicated that egg addition increased water, fat, ash and protein of the snack bar with the percentage range are as follow: water 18.13-30.01 %db, fat 15.08-17.89 %db, ash 3.00-3.11 %db, and protein 3.91-6.95 %db. The aw value of the snack bar increased when the amount of egg was increased, meanwhile the textural properties including the hardness and cohesiveness were decreased. The range of aw, hardness, springiness, and cohesiveness of the treated samples were as follow,: 0.70-0.82; 11.12-14.31 kgf; 0.62-0.85 and 0.27-0.37, respectively.Keywords: Banana flour, banaa puree, snack bar, egg, food texture ABSTRAKPenggunaan telur dalam formulasi makanan akan berpengaruh pada karakteristik produk yang dihasilkan. Dalam penelitian ini telah dibuat makanan ringan berbentuk batang (snack bar) diformulasikan dari bahan-bahan baku utama tepung pisang dan pure pisang. Pengaruh penambahan telur (0% sebagai kontrol, 5%, 9%, 13% dan 17%) terhadapkandungan proksimat, nilai air bebas (aw) dan tekstural dari produk snack bar tersebut dievaluasi. Dari hasil percobaan terungkap bahwa penambahan telur mampu meningkatkan kandungan proksimat yaitu air, lemak, abu dan protein dari snack bar tersebut dengan kisaran secara berturut-turut yaitu air 18,13-30,01 %bk, lemak 15,08-17,89 %bk,abu 3,00-3,11 %bk, dan protein 3,91-6,95 %bk. Nilai aw dari snack bar tersebut juga meningkat seiring peningkatan konsentrasi telur yang digunakan, sedangkan karakteristik tekstural produk snack tersebut yang meliputi kekerasan dan elastisitasnya cenderung menurun. Kisaran dari nilai aw, kekerasan, elastisitas, kekenyalan dari sampel snack bar secaraberturut-turut adalah : 0,70-0,82; 11,12-14,31 kgf; 0,62-0,85 dan 0,27-0,37.Kata kunci: Tepung pisang, puree pisang, snack bar, telur, tekstur pangan
Tepung pisang matang memiliki kelemahan yaitu sifat fisik yang kurang baik. Penelitian ini bertujuan untuk mengetahui apakah dekstrin dan albumen telur (putih telur) dapat memperbaiki sifat fisik serta meningkatkan nilai gizi dan penerimaan tepung pisang matang. Rancangan penelitian yang digunakan adalah rancangan acak lengkap dengan 3 perlakuan yaitu pembuatan tepung pisang matang kontrol (tanpa perlakuan), dengan penambahan dekstrin, dan dengan penambahan albumen telur (putih telur). Analisis yang dilakukan terhadap produk adalah analisis kimia (kadar air, lemak, protein, abu dan serat kasar, pH, dan TPT) dan sifat fisik (rendemen, derajat putih, water holding capacity), serta analisis sensori. Hasil menunjukkan bahwa penambahan buih albumen telur (putih telur) meningkatkan kadar protein (10,40%) dan kadar abu (2,97%) tepung pisang matang, serta meningkatkan nilai pH (4,97), dan WHC pada o o suhu 40 C (0,85) dan WHC pada suhu 80 C (1,81). Penambahan dekstrin meningkatkan o kandungan karbohidrat (87,07%) dan TPT (6,37 briks). Tepung pisang matang tanpa perlakuan menghasilkan tepung pisang dengan kadar air dan kadar lemak tertinggi yaitu 9,08% dan 0,34%, serta rendemen, derajat putih dan skor peneriman sensori tertinggi yaitu 18,42%; 26,24%; dan 4,93. Penambahan dekstrin dan buih albumen telur (putih telur) meningkatkan nilai gizi dari segi kandungan protein, abu, dan lemak tepung pisang matang dan juga nilai pH, TPT, dan WHC, namun tidak meningkatkan rendemen dan derajat putih serta penerimaan sensori tepung pisang matang.
<p>Jenis dan konsentrasi hidrokoloid akan menentukan kualitas dari minuman jeli baik sifat fisikokimia dan penerimaan sensorinya. Tujuan penelitian ini adalah untuk mengkaji pengaruh jenis dan konsentrasi hidrokoloid terhadap mutu fisikokimia dan penerimaan minuman jeli berbahan baku sari buah campuran pepaya (<em>Carica papaya</em>) dan nanas (<em>Ananas comosus</em>). Penelitian ini disusun menggunakan Rancangan Acak Lengkap Faktorial dengan 2 faktor, yaitu faktor jenis hidrokoloid, terdiri dari 2 taraf (karagenan dan karagenankonjak) dan faktor konsentrasi hidrokoloid, terdiri dari 3 taraf (0,5%,0,7%, 0,9%, dan 1,1%). Analisis yang dilakukan adalah analisis pH, total asam tertitrasi (TAT), total padatan terlarut (TPT), dan uji organoleptik. Produk terbaik diuji dan dibandingkan teksturnya dengan produk komersial. Produk terbaik diuji proksimat, kandungan serat pangan dan warna. Hasil penelitian menunjukkan jenis dan konsentrasi hidrokoloid berpengaruh terhadap pH, tetapi tidak berpengaruh terhadap TPT dan TAT minuman jeli. Tingkat kesukaan panelis berdasarkan uji organoleptik pada paramater warna, aroma, rasa, daya sedot, dan penerimaan keseluruhan terhadap minuman jeli dipengaruhi oleh konsentrasi hidrokoloid tetapi tidak dipengaruhi oleh jenis hidrokoloid. Produk terbaik yang mendekati produk komersial adalah minuman jeli pepaya nanas dengan penambahan hidrokoloid karagenan 1,1% dengan sifat fisik : kekerasan 62,5 gf dan kekuatan gel 7,33 Mj, mengandung kadar air 84,02%, abu 0,17%, lemak 0,39%, protein 0,26%, serat pangan sebesar 6,39%, vitamin C sebesar 19,99 mg/ 100g dan warna dengan nilai L 28,64; a 4,73 ; dan b 9,52.</p><p align="center"><strong>English Version Abstract</strong></p><p align="center"><strong><strong>(Effect of Type and Concentration of Hidrocolloid on the Quality of Jelly Drink from Papaya-Pineapple Mixed Juice.)</strong></strong></p><p>The type and concentration of hydrocolloids will determine the quality of jelly products both physicochemical and sensory evaluation. Beside has a high gel strength and low syneresis, carrageenan and konjac (konjac glucomannan) also contain high dietary fiber. The purpose of this study was to find out the effect of the type and concentration of hydrocolloid on the physicochemical and sensory evaluation of the jelly drink made from a papaya pineapple mixed juice. This study uses a factorial completely randomized design (CRD) to evaluate the effect of two kinds of hydrocolloids (carrageenan and mixture of carrageenan konjac) and four concentrations of hydrocolloid (0.5; 0.7; 0.9; 1.1%), in manufacture of jelly drink. An analysis of eight treatments i.e., pH, total acid, total dissolved solids, and organoleptic test. Samples will be selected into two products using DeGarmo effectiveness index, which its texture will be tested and compared to commercial products. The best products analyzed proximate value, the content of dietary fiber and color. Results showed that the type and concentration of hydrocolloids influenced the levels of pH jelly drink, but did not affect on dissolved solids and total acid. Hydrocolloid concentration also affects the assessment of the panelists of the jelly drink products. The best product is papaya pineapple jelly drink with the addition of 1.1% carrageenan hydrocolloid with physical properties: hardness 62.5 gf and gel strength 7,33 Mj, containing moisture 84.02%, ash 0.17%, fat 0.39 %, 0.26% protein, dietary fiber 6.39%, vitamin C 19.99 mg/100 g and color properties : value of L 28.64; a 4.73; and b 9.52.</p>
Biskuit MP-ASI (Makanan Pendamping Air Susu Ibu) yang terdapat di pasaran terbuat dari tepung terigu. Selain aspek gizi, pengembangan produk biskuit MP-ASI non terigu membutuhkan tekstur dengan kekerasan yang rendah dan kerenyahan yang tinggi. Penelitian ini bertujuan untuk mengetahui karakteristik fisikokimia biskuit MP-ASI dengan perbandingan mocaf dan jenis pati. Metode penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan variasi perlakuan jenis pati (jagung, kentang, garut, tapioka) dan rasio penambahan mocaf dengan pati (3:1, 2:1, 1:1, dan 1:2). Hasil penelitian menunjukkan bahwa biskuit yang dihasilkan telah memenuhi SNI biskuit MP-ASI. Semakin tinggi rasio pati yang ditambahkan menyebabkan penurunan kadar air, abu, kecerahan, dan kekerasan biskuit MP-ASI. Formulasi biskuit MP-ASI yang terpilih adalah campuran mocaf dan pati kentang dengan rasio mocaf:pati sebesar 1:2 menghasilkan tingkat kekerasan terendah dibanding pati yang lain.
ABSTRAK. Tepung mocaf dapat digunakan sebagai pengganti terigu pada pembuatan biskuit MP-ASI (Makanan Pendamping Air Susu Ibu) karena mengandung karbohidrat yang tinggi. Kadar protein yang rendah dari tepung mocaf memerlukan penambahan tepung kacang-kacangan sebagai sumber protein sehingga membentuk tepung komposit yang sesuai untuk bahan baku biskuit MP-ASI. Tujuan penelitian ini adalah untuk mengetahui karakteristik sifat fisikokimia, fungsional dan profil gelatinisasi dari tepung komposit mocaf dan kacang-kacangan. Jenis kacang-kacangan yang digunakan adalah kedelai, kacang hijau dan kacang merah.Setiap jenis tepung kacang-kacangan ditambahkan sebesar 40% untuk masing-masing formulasi tepung komposit. Hasil penelitian menunjukkan bahwa penambahan tepung kedelai, kacang hijau dan kacang merah secara signifikan berpengaruh terhadap peningkatan kadar abu, protein, lemak, kelarutan, aktivitas dan stabilitas emulsi, kapasitas dan stabilitas foam dan suhu gelatinisasi. Penambahan tepung kacang-kacangan pada tepung mocaf juga berpengaruh signifikan terhadap penurunan kadar pati, amilosa, swelling power, kapasitas penyerapan minyak serta profil gelatinisasi (viskositas puncak, breakdown, akhir dan setback) dari tepung komposit yang dihasilkan. Tepung komposit mocaf-kacang hijau adalah yang direkomendasikan sebagai bahan baku pembuatan biskuit MP-ASI karena memiliki kelarutan yang rendah dan densitas kamba yang tinggi serta memenuhi persyaratan SNI biskuit MP-ASI yang mensyaratkan kandungan protein minimal 6%, lemak maksimal 18% dan serat pangan maksimal 5%.
