A microalga Spirulina maxima foi cultivada em meios com 2,5g/L KNO 3 (2,5N), proposto por PAOLETTI et al [10] e considerado meio padrão, em meios com 0,2g/L KNO 3 (0,2N) e em ausência de nitrogênio (0,0N) nas temperaturas de 25°C e 35°C. A composição da biomassa celular seca apresentou a 35°C um aumento médio dos lipídios totais, de 2,8 vezes do meio com ausência de nitrogênio (0,0N) e 2,9 vezes do meio 0,2N em relação ao meio padrão. A 25°C apresentou um aumento médio de 3,1 vezes do meio com ausência de nitrogênio (0,0N) e 3,2 vezes do meio 0,2N em relação ao meio padrão. A biomassa em forma de gel de cada tratamento foi recolhida e feita a extração dos lipídios totais, os quais foram pesados em base seca. As análises estatísticas dos resultados, em estimativa não linear com superfície de resposta e regressão múltipla com análise de resíduos, mostraram para o aumento dos lipídios totais uma função linear com a temperatura (T) e não linear com o nitrogênio (N), ajustando-se a um modelo onde o coeficiente de regressão R=0,99459 e a equação LIPT = A+B 2 T+CN 2 .Palavras-chave: Spirulina; lipídios; nitrogênio; microalga. SUMMARY -INTRODUÇÃOA microalga Spirulina maxima é cultivada principalmente para a produção de alimentos ricos em proteí-nas e usos terapêuticos, devido a esta produzir diversas substâncias como lipídios, vitaminas, sais minerais e pigmentos de interesse econômico, [2, 4,5,6,12]. A Spirulina é uma cianobactéria utilizada principalmente como dieta alimentar e de emagrecimento. É uma das únicas a produzir quantidades elevadas de ácidos graxos apolares essenciais, de grande importância terapêutica, em sua fração lipídica. Estudos visando a obtenção de ficocianina e ácidos graxos essenciais foram desenvolvidos em Israel, França e Japão. As microalgas foram indicadas como alimentos que possam ser usados como fonte alternativa de lipídios comestíveis devido aos seus altos níveis de triglicerídios e sua alta produtividade [8].A Spirulina é uma microalga verde-azulada multicelular e filamentosa, cujos filamentos ou tricomas tem forma helicoidal, podendo variar as suas dimensões com as diversas espécies, ocorrendo polimorfismo dentro da mesma espécie, como exemplo a Spirulina maxima que encontramos com forma reta, predominante, e espiralada [3,13]. Ela é mesofílica com temperatura ótima de crescimento de 35°C a 37°C, sendo que algumas cepas podem crescer de 18°C a 39°C, essencialmente fotoautotrófica, não crescendo no escuro, nem utilizando carbono orgânico e a sua principal fonte de nitrogênio na forma de nitratos, uréia ou sais de amônio com alta alcalinidade [13,19].Os lipídios correspondem em média a 11% em peso de S. platensis e 12% de S. maxima, em laboratório, sendo de grande importância para várias aplicações. Influência do teor de nitrogênio na alteração da composição da biomassa Spirulina maxima, Santos et al. -INTRODUÇÃOSpirulina maxima é uma cianobactéria que pode ser utilizada na composição de alimentos dietéticos e tem sido objeto de estudos em vários países como Israel, Japão, França, E.U.A. e Brasil [2,3]. Juntamente com outras microalgas, podem ser utilizadas como fonte alternativa de proteínas, lipídios (ácidos graxos essenciais), ficocianina e outros, em alimentos e rações. Desenvolve-se bem na faixa de temperatura de 35 a 37ºC, é essencialmente fotoautotrófica, tem preferência por meios alcalinos, com pH na faixa de 8,5 a 11, sendo sensível a mudanças bruscas no seu meio de cultivo [1,2,5,9,10,15]. Spirulina maxima apresenta altas concentrações de proteínas de fácil digestão e contém todos os aminoácidos essenciais em concentrações acima do padrão alimentar da FAO-OMS, com valor de PER (Razão de eficiência protéica) de 2,2, acima do valor de outras fontes, mostrando a importância da sua utilização como alimento em futuro próximo [4,5,10]. Segundo PAOLETTI, VICENZI & BOCCI [8]Spirulina maxima apresentou em sua composição centesimal 72, 12 e 11% de proteínas, lipídios e carboidratos respectivamente, quando cultivada em laboratório. Porém, estes valores alteraram-se para 60, 15 e 16% respectivamente, quando o cultivo foi feito em tanque aberto, o que mostrou que a composição das algas pode alterar em função da maneira como esta é cultivada.Foi observado que o conteúdo de lipídios de algas verdes aumentou de duas a três vezes após 5 a 9 dias em meio com ausência de nitrogênio e que a presença de nitrato, fosfato e bicarbonato em baixas concentrações promoveu um aumento significativo da fração de carboidratos e proteínas nas células, acompanhado de aumento da concentração de cloreto de sódio [3,11,12,13].Em relação à temperatura de cultivo, observa-se que a variação de 30ºC para 42ºC promoveu um aumento de 7,4% para 11,5% no conteúdo de lipídios, um decréscimo de 58,6% para 45% do conteúdo de proteínas e um aumento de 29,9% para 38,7% do conteúdo de carboidratos [13].
