RESUMOEnzimas microbianas como fitase e xilanase são interessantes para a indústria alimentícia dos animais monogástricos. O objetivo do presente estudo foi avaliar o efeito das condições de secagem por spray dryer nas enzimas extracelulares, fitases e xilanases, produzidas por fungos em cultivo em estado sólido. O meio de cultivo utilizado pelo fungo Lichtheimia ramosa para produção de fitases foi composto por bagaço de cana de açúcar (BC), farelo de trigo (FT) e bagaço de laranja (BL). Para produção de xilanase foi empregado o fungo Myceliophtora thermophila e o meio de cultivo utilizado composto de BC e FT. As enzimas foram submetidas ao spray dryer com o farelo de soja como adjuvante. . Para os ensaios de secagem foi empregada a técnica de superfície de resposta, sendo usadas variáveis preditoras a temperatura de saída do ar, a vazão de alimentação de suspensão e a concentração de sólidos. Os resultados indicaram a vazão e concentração de sólidos como variáveis significativas. A suspensão na condição ótima de secagem continha 7,5% e a vazão foi de 3 mL/min, sendo a temperatura escolhida de 83 ºC. O ensaio realizado nestas condições proporcionou retenção 83% de atividade de fitase e de 85% xilanase.
