OBJETIVO: Avaliou-se o impacto da farinha de mandioca fortificada com ferro aminoácido quelato em 80 pré-escolares de uma Unidade Filantrópica de Manaus, AM, distribuídos aleatoriamente em quatro grupos de 20 crianças cada, por um período de 120 dias. MÉTODOS: Foram utilizadas farinha de mandioca sem fortificação (Grupo zero) e fortificada com 1, 2 e 3mg de Fe/dia, correspondendo a quantias diárias de 5, 10 e 15g de farinha, respectivamente, as quais foram distribuídas no horário do almoço, sendo ainda entregue às famílias a quantidade destinada ao consumo do final de semana. O estado nutricional das crianças foi avaliado no início e ao final do experimento, adotando-se como limite discriminatório entre eutrofia/desnutrição o ponto de corte <-2 escores-Z, de acordo com os critérios da Organização Mundial da Saúde, e estabelecendo-se como ponto de corte para a ocorrência de anemia ferropriva o teor de hemoglobina inferior a 11g/dL. RESULTADOS: Houve uma recuperação das crianças com desnutrição crônica ao final do estudo, e ocorreu um aumento significativo (p<5%) dos valores de hemoglobina de todos os pré-escolares, independentemente da concentração de ferro, de 11,4 ± 0,9g/dL para 12,2 ± 0,8g/dL. As crianças anêmicas que receberam a farinha de mandioca fortificada com 2mg de Fe/dia foram plenamente recuperadas ao final da pesquisa, demonstrando um bom desempenho desse grupo em relação aos demais. CONCLUSÃO: Sugere-se um estudo duplo cego para a consolidação da recomendação da farinha de mandioca fortificada com ferro na prevenção de anemia ferropriva em pré-escolares da região amazônica.
Objetivo: Descrever a capacitação de colaboradores de um Serviço de Nutrição e Dietética sobre segurança do paciente e identificação correta do paciente no fornecimento de dietas hospitalares. Relato de Experiência: Estudo descritivo tipo relato de experiência, elaborado a partir da capacitação realizada com os colaboradores do Serviço de Nutrição e Dietética de um hospital público em Belém-PA. A atividade incluiu exposição de vídeo, palestra expositiva, apresentação e avaliação de material educativo. Participaram 22 colaboradores que atuam como cozinheiros, copeiros, despenseiros e serviços gerais, os quais demonstraram surpresa com os eventos adversos que poderiam ser evitados pela adoção de protocolos enfocando a segurança do paciente e perceberam que os colaboradores do Serviço de Nutrição e Dietética atuam na assistência ao paciente e devem adotar as orientações para a melhoria do cuidado. Alguns desconheciam que a identificação correta do paciente pode minimizar riscos relacionados à assistência em saúde. Os colaboradores avaliaram o conteúdo da cartilha como adequado e consideraram a capacitação importante. Considerações Finais: A capacitação é uma ferramenta para a implantação de um novo processo de trabalho, sendo relevante envolver e valorizar a atuação dos profissionais no serviço para que atuem proporcionando segurança ao paciente e a qualidade do cuidado.
O trabalho teve por objetivo analisar a percepção dos coordenadores de Cursos de Graduação em Nutrição sobre o Exame Nacional de Desempenho do Estudante – ENADE/2004, por meio de um questionário contendo onze questões, sendo dez objetivas e uma subjetiva, abrangendo os diversos contextos do exame. A avaliação foi positiva quanto ao questionário socioeconômico, seleção, qualidade e abrangência das questões dos componentes de formação geral e específica, e negativa, por induzir a uma classificação hierárquica dos cursos, ao invés de avaliar o desempenho dos estudantes. Estes resultados podem servir para o aprimoramento dos próximos exames, e contribuir para o aperfeiçoamento dos projetos pedagógicos do Curso de Nutrição e melhoria do ensino superior na área.

Abstract
The objective of this study was to analyze the perception of the coordinators of Graduation Courses in Nutrition about Brazilian National Examination of Student Performance – ENADE/2004 by using a questionnaire contained eleven questions, being ten objectives and a subjective one, enclosing the diverse contexts of the exam. The ENADE had positive evaluation to the purpose of the social and economic questionnaire; questions selection, quality and comprehensiveness of the questions of general and specific components. According to the coordinators perceptions, the negative aspect of the exam was the probably manner of inducing to a hierarchic classification of the courses, instead of evaluating the student’s performance. These analyses could be proposals for the next examinations, as well as to contribute for the improvement of the pedagogic projects of Nutrition Courses and to approaching the superior education in this area.
