Os carotenoides estão entre os fitoquímicos bioativos creditados na redução do risco de doenças degenerativas, associados especialmente à ação antioxidante. Embora os animais não sintetizem carotenoides, estes compostos são incorporados nos produtos gerados, como o leite, por meio da alimentação. Outra característica dos lácteos é de ser uma das fontes naturais mais ricas em ácido linoleico conjugado (CLA) com propriedades também benéficas à saúde, em especial a redução da gordura corporal, sendo coadjuvante no controle de doenças crônicas não transmissíveis. Considerando que estes compostos bioativos estão presentes na gordura do leite e a manteiga está entre as principais fontes alimentares de laticínios, torna-se relevante à cadeia láctea identificar sistemas de produção que proporcione enriquecimento natural desta fração, com benefícios à saúde dos consumidores. As características peculiares de produção de leite no Brasil mostram diferenças sazonais na composição centesimal e no perfil de ácidos graxos, porém, são escassos estudos a respeito da presença e variabilidade de carotenoides, bem como a sua associação com o perfil de ácidos graxos. Desta forma, o presente estudo, com base na literatura disponível, apresenta a relevância dos compostos mencionados na saúde dos consumidores e os principais fatores que afetam a sua presença no leite e na manteiga, de forma a contribuir com a cadeia láctea, na busca de produtos mais saudáveis e com valor agregado.
