The possibility of varying beer formulations is acquired by variations in beverage production and the usage of different ingredients such as wheat, rice, corn, rye, cassava, honey, fruits, and others. Consequently, this work aimed to develop artisanal beers adding rice flakes and soursop pulp as adjuncts. Four artisanal beer formulations were elaborated, evaluating the following parameters: °Brix, pH, density, alcohol content, total acidity, real extract, primitive extract, color and sensory acceptability. Results revealed that the samples were in accordance with the standards established by legislation. In the sensory analysis through the acceptance test, both pure malt beer and adjunct formulations exposed good acceptance in relation to the analyzed attributes. Regarding the beer formulations development, the results were satisfactory, ensuring quality artisanal beer varieties.
Resumo A utilização de matérias-primas funcionais vem crescendo nos últimos anos e tem como objetivo fornecer, além de nutrientes essenciais, compostos associados a efeitos benéficos à saúde. Dentre os ingredientes com alegações funcionais, a inulina tem sido considerada uma importante fibra alimentar. Além disso, o conhecimento e a utilização de Plantas Alimentícias Não Convencionais (PANCs) vêm recebendo destaque, valorizando a biodiversidade e a alimentação mais sustentável. Assim, o presente estudo teve como objetivo desenvolver sorvetes utilizando matérias-primas não convencionais, a planta ora-pro-nóbis e a inulina, a fim de produzir alimento funcional e inovador. Foram elaboradas duas formulações de sorvetes, que se diferenciaram apenas pela quantidade de inulina. Na Formulação 1 (F1), o sorvete de ora-pro-nóbis recebeu adição de 3% de inulina e, na Formulação 2 (F2), o sorvete de ora-pro-nóbis recebeu adição de 6% de inulina. Foram realizadas análises físico-químicas e de aminoácidos das folhas de ora-pro-nóbis. Posteriormente, foram conduzidas as análises microbiológicas, físico-químicas e sensoriais das formulações de sorvete. Os resultados foram comparados estatisticamente pelo método t-Student com nível de significância de (p˂0,05). O teor proteico das formulações foi elevado, 10,54 ± 2,20% para F1 e 12,13 ± 0,57% para F2. Não houve diferença significativa nos conteúdos de lipídios, cinzas, proteínas e fibra bruta entre as formulações. As amostras estão de acordo com os padrões microbiológicos estabelecidos pela legislação. Com relação à análise de incorporação de ar, a F2 apresentou valor superior (41,26 ± 0,13%) comparada à F1 (36,36 ± 0,17%). Além disso, a F2 apresentou menor taxa de derretimento (1,20 g/minuto) que a F1 (3,38 g/minuto). Os sorvetes apresentaram boa aceitação sensorial e podem servir como opção de consumo para as pessoas que procuram um produto saudável e com elevado teor de proteínas.
O presente trabalho teve como objetivo a divulgação do curso de engenharia de alimentos, para os discentes de escolas publicas de Itaquiraí, município vizinho a Naviraí, onde se localiza a unidade da Universidade Estadual de Mato Grosso so Sul (UEMS), onde é ofertado o curso de Engenharia de Alimentos. A divulgação teve como finalidade enfatizar informações atraves de banners e palestras para os alunos do ensino médio. Os alunos aprenderam as funções e a importância do engenheiro na elaboração de novos produtos e tecnologias inovadoras, para melhor atender ao público consumidor. Na maioria das vezes, os alunos do ensino médio tem dificuldade em decidir qual o curso de graduação Nesses momentos, também foram esclarecidas dúvidas sobre o curso e areas de atuação profissional. Conclui-se que as informações transmitidas aos alunos geraram um novo olhar e perspectiva sobre o curso e a área de alimentos, e proporcionado uma oportunidade de integração com uma universidade pública estadual.
Este artigo aborda as estratégias utilizadas para a avaliação do local de manipulação de alimentos e o comportamento dos manipuladores em escolas do município de Naviraí-MS, bem como a reutilização de resíduos de alimentos oriundos da merenda. Utilizou-se a abordagem quantitativa para levantar as conformidades e não conformidades no local de manipulação, por meio de técnicas de observações e de roteiros integrados. O objetivo deste estudo foi descrever um relato de uma experiência de articulação entre ensino, pesquisa e extensão sobre as boas práticas de manipulação de alimentos no preparo da merenda escolar. Dessa forma, os alunos extensionistas contribuíram com seu conhecimento técnico para melhoria da qualidade da alimentação servida a crianças e adolescentes do educandário municipal, através de pales.tras, treinamentos e visando a promoção da saúde na comunidade escolar.
Esse projeto de extensão foi desenvolvido no município de Naviraí-MS, objetivando a melhoria da qualidade dos alimentos produzidos e comercializados por uma cooperativa agroindustrial do município, visando o bem estar e a saúde dos consumidores. O objetivo de aplicar as noções básicas para os manipuladores de alimentos da forma correta de aplicação, monitoramento e elaboração de procedimentos operacionais padronizados (POP) e Boas Práticas de Manipulação (BPM), através de palestras, treinamentos e elaboração de um material informativo com fundamento na Resolução RDC N° 216 de 15 de setembro de 2004 para incentivar a adoção de ações corretivas. A experiência obtida bem como dos manipuladores de alimentos da cooperativa participantes mostraram a importância do Projeto de Extensão voltados para esse público, possibilitando uma imersão de estudos dos alunos para além da sala de aula, além de contribuir com a melhoria da qualidade dos alimentos comercializados no município.
