The heating elements we use for the viscometer cup incorporate temperature sensors, so (unlike the gellation coil heaters) they can safely be left switched on even when the apparatus is not in use. We have both cup heaters set to 95 "C, which for our modified starches is the temperature that gives the most satisfactory results.
Examination of the suitability of a number of starches for the production of fructose syrup is described. In addition to maize starch, starch from wheat, potatoes and tapioca has been examined. Liquefaction, saccharification and purification were performed in pilot scale, whereas the produced syrups were isomerized in laboratory scale. The liquefactions were performed with TermamylC in a jet cooker process. Saccharification with Amyloglucosidase Novo 150 L under standard conditions gave good DX values. After purification the syrups were isomerized in laboratory columns with SweetzymeC. The resultsactivity and productivity of Sweetzyme were for all syrups as good as or better than those obtained with dextrose solutions. Verflussigung, Verzuckerung und Reinigung wurden in einer Pilotanlage ausgefuhrt, wahrend die erhaltenen Sirupe im Labormaflstab isomerisiert wurden. Die Verflussigung wurde mit Termamyls in einem Injektionskocher-Prozefl durchgefuhrt. Die Verzuckerung mit Amyloglucosidase Novo 150 L ergab unter Standardbedingungen gute DX-Werte. Nach Reinigung wurden die Sirupe in Laborsaulen mit Sweetzymes isomerisiert. Die Ergebnisse -Aktivitat und Produktivitat von Sweetzymewaren fur alle Sirupe ebenso gut wie oder besser als die Resultate, die mit Dextroselosungen erhalten wurden.
