The aim of the work is the development of recipes of fresh-mixes with the balanced potassium-protein composition and expressed cardio-and protective properties.For creating recipes of cardio-protective fresh mixes, there was used linear programming in MS Excel redactor. The target function was the balanced P-protein composition.The potassium content was 148-190 g for 100 g of the ready beverage that covers in average 6-8 % of the daily potassium need in patients with cardio-vascular diseases. At the expanse of introducing glutin, beverages contain oxylizin and oxyproline in concentration 0,15…0,2 %. The energetic value of developed fresh-mixes was 58,8-64,6 kcal.There was determined biological activity of developed beverages by the index of non-enzymatic oxidation of NAD·Н 2 to NAD. At the development of beverages, there was fixed the effect of synergism at the expanse of introducing the spicy-aromatic raw material -turmeric and the protein one -glutin.ALST test, based on changing microbiological and sensory indices at storage, demonstrated the optimal storage term 5 days at the temperature (5±1) °С in a hermetic package.Fresh-mixes, enriched with potassium and easily assimilated protein were developed for the first time. They can not only satisfy needs in these nutrients but favor production of own protein of the connective tissue, for keeping the healthy condition of the cardiac muscle.
Using the tabular processor MS Excel 2007 there was elaborated the recipe of the fermented milk dessert for child food. The recipe of this dessert consists of (mass. %, g): fermented milk curd – 54, jam – 23, honey – 8, sesame – 4, cream – 6, collagen hydrolyzate (gluten) – 5. This dessert is a source of vitamin C and covers near 40 % of a child daily need in it. At the expanse of introducing gluten in the dessert composition, protein content in the ready product increased that covers from 11,28 % to 22,56 % of a daily need. This dessert is also rich in calcium, so one portion of it covers 25 % of a child need. Based on theoretical qualimetry methods there was realized the complex estimation of the dessert quality. The hierarchic structure of ready product properties was presented, including organoleptic and physical-chemical parameters and also ones of the food and biological value at storage. The estimation of microbiological and organoleptic parameters at storage give a possibility to state, that the new fermented milk dessert will be competitive at the consumer market. The storage life of this product is 5 days at the temperature (4±2) °С.

The paper presents an analysis of literary sources, which shows the importance of expanding the range of functional products and the relevance of developing technology for the integrated processing of Jerusalem artichoke tubers. For experimental studies used standardized techniques. Using the Ishikawa diagram, the most significant causal relationships of the main factors that influence the quality of healthy food products prepared on the basis of the Jerusalem artichoke are identified. Studies of the amino acid composition of tubers and limiting amino acid established. The main raw material is tested for the content of heavy metals and nitrates. The possibility of excluding the “cleaning” technological operation was experimentally substantiated and confirmed by microbiological studies. We have studied the effect of microwave processing at different processing modes to reduce the microbiological contamination of raw materials. Technologies have been developed for the processing of topinambur into candied peel and fermented products. In the technology of candied peel, to reduce the mass fraction of sugar in the finished product, which is used for sprinkling, a mixture of fructose and pectin was used. Drying was carried out to achieve in the finished candied mass fraction of moisture 14%. The parameters of the Jerusalem artichoke fermentation process were established: temperature - 20 ° С, duration 10 days, the amount of the added starter was 1% of the mass of the prepared raw material. Lactic acid bacteria Lactobacillus plantarum strain AH 11/16 were used as the starter. Fermentation was carried out before the accumulation of titratable acids 0.8 ... 0.9%, in terms of lactic acid. A flow chart of the integrated processing of Jerusalem artichoke tubers into functional food products is presented. A tasting of the developed samples was carried out, which showed high organoleptic indicators of the quality of the finished product. The developed technologies have been tested in restaurant facilities.
Визначено показники амінокислотного СКОРу білкової системи, що представляє собою розчини різної концентрації гідролізату колагену у молочній сироватці (2 %, 4 %, 6 %). Показано, що всі розчини мають збалансований вміст незамінних амінокислот. Однак для досліджень вибрано харчову систему, що має концентрацію гідролізату колагену 4 %, що забезпечить добову потребу організму людини. Досліджено піноутворення вуглеводно-білкової системи в залежності від співвідношення пектину яблучного та гідролізату колагену в молочній сироватці (0,5:1; 1:1; 1:0,5). Збивання проводили при температурі 10 °С в продовж 60 секунд. Отримані дані виявили оптимальне співвідношення основної вуглеводно-білкової сировини: концентрація гідролізату колагену 4 %, співвідношення пектин:гідролізат колагену 1:0,5. За допомогою математичного моделювання розроблена рецептура аерованого смузі на основі молочної сироватки, фруктового соку, пектину яблучного та гідролізату колагену з підвищеним вмістом макронутрієнтів. Аналіз споживчої цінності розробленого продукту показав, що вміст основних макронутрієнтів склав 22,64 г на порцію (200 г) або 11,32 г на 100 г. Співвідношення основних мінеральних речовин кальцію, магнію та фосфору дорів- нює 1:0,11:0,6 . Аналіз амінокислотного СКОРу показав, що розроблений продукт має високий ступінь засвоюваності незамінних амінокислот, що пов'язано з відсутністю лімітуючої амінокислоти, СКОР якої менший ніж 100 %. Визначення біологічної активності показало, що для готового смузі біологічна активність в середньому в 8,1 разів вища ніж у його складових, що свідчить про синергізм речовин антиоксидантної дії. Оцінка сенсорних показників розробленого смузі показала високі якісні характеристики нового продукту, що є важливим для продукції закладів ресторанного господарства. За допомогою методів математичного моделювання розроблено рецептури імуностимулюючих фреш-міксів. Оптимізацію рецептурного складу проводили за вмістом білку та калію. Визначено біологічну активність отриманих напоїв, вміст основних харчових нутріентів та проведена товарознавча оцінка якості даних продуктів. Використовуючи тест ALST визначено умови зберігання розроблених фреш-міксів Ключові слова: комплексна оцінка якості, імуностимулюючий напій, біологічна активність, харчова цінність, термін зберігання С помощью методов математического моделирования разработаны рецептуры иммуностимулирующих фреш-миксов.
