In Mexico, chili is one of the most important crops for high involvement in the value of the regional agricultural production, generation of income to producers and jobs in wild chili production areas. In the Northeastern of Mexico this wild chili species is strongly rooted in its typical gastronomy.The present study aims to present a model of the economic activities that promote the generation of the value of the "chile piquin"wild chili of the northeastern Mexico, thereby;on the basis of the local production it can reach the final consumer himself which can be likewise, regional, national or international. This exploratory analysis was carried out to collect information of marketing of chili and update about scientific investigations and make a comparative study of our information available and finally to create a frame of reference for future upgrades of the product chain "chile piquin" wild chili which could serve as a basis for other studies. The tool used for obtaining information with statistical validity (p≤0.05) was the method of interviews and of focal group. A flow diagram is developed of the value chain of the "chile piquin" wild chili in northeastern Mexico, which explains theprocesses and pathways that follows the marketing and the increase in the value added of this important product.It was concluded that prices of wild chili have been increased in accordance with the food prices and the fall in the harvested area and production quantity (supply) in Mexico.
La siembra de chile habanero (Capsicum chinense Jacq.) en México se encuentra concentrada en alrededor de 80% en la península de Yucatán. Aproximadamente 50% del área dedicada a esta hortaliza se siembra con materiales criollos, el resto con variedades de polinización libre y un área mínima con híbridos de reciente formación, desarrollados por empresas transnacionales, lo que propicia fuga de divisas que afecta la economía del país. Por lo antes mencionado, el objetivo de este trabajo fue obtener una variedad de chile habanero con alto rendimiento y calidad de fruto para las regiones productoras de México, como resultado, el INIFAP desarrolló la variedad de chile habanero Jaguar en el año 2009, la cual inicia su floración y cosecha de 70-85 y 115-120 días después de la siembra, respectivamente. Produce frutos uniformes, de color verde esmeralda que se tornan anaranjado brillante en madurez total, muy atractivos para mercado en ambos estados de madurez. Esta variedad alcanza rendimientos de alrededor de 15 t ha-1 en condiciones de buen temporal y de 30 t ha-1 a cielo abierto con tecnología de media a alta. Mientras que en condiciones de agricultura protegida es de hasta 43 t ha-1.
El desconocimiento de los factores genéticos de la expresión de la calidad poscosecha impide que se usen en su mejoramiento genético. En este trabajo se estiman los efectos genéticos de la duración de la vida de anaquel de chile serrano (Capsicum annuum L.) y se caracterizan los materiales utilizados por su mayor vida de anaquel. Las cruzas posibles entre siete líneas de chile serrano producidas mediante el diseño genético de cruzas dialélicas y sus progenitores, se evaluaron en campo en el sur de Tamaulipas durante el ciclo otoño-invierno de 2001 bajo condiciones de riego. Las características medidas fueron: rendimiento de fruto verde, vida de anaquel (días a pérdida de valor comercial), peso individual y tasa de pérdida de peso del fruto. Los resultados mostraron que en la expresión del rendimiento participan efectos aditivos y de dominancia; la vida de anaquel y peso individual de fruto están determinados solamente por efectos de dominancia. La tasa de pérdida de peso está determinada principalmente por efectos aditivos. Se observaron efectos de heterosis altos para vida de anaquel, y heterosis de baja a moderada para rendimiento y tasa de pérdida de peso. La heterosis varió de 11 a 127 % en rendimiento; de 0.5 a 248 % en vida de anaquel; de 17 a 247 % en peso individual de fruto; y de -37 a 52% en tasa de pérdida de peso. Se detectaron efectos significativos (P ≤ 0.05) en la aptitud combinatoria general (ACG) de los padres para rendimiento y tasa de pérdida de peso, y en los de aptitud combinatoria específica (ACE) de las cruzas para rendimiento. Por tanto, la vida de anaquel y el peso individual de fruto pueden ser mejorados con métodos que exploten más los efectos de dominancia para formar variedades híbridas, mientras que la tasa de perdida de peso puede ser mejorado con métodos tradicionales de endocría yselección.
