Purpose Okara, which is the residue of hydrosoluble extract from soybean obtained after soymilk and tofu production, has high nutritional value and can be used for ingredient in specific food products. This study aims to evaluate the production and properties (physicochemical, microscopical and functional ones) of okara flour (OF) obtained from okara as a by-product of soymilk and tofu production. Design/methodology/approach Wet okara resulted from the soymilk process underwent convective drying up to reach mass stability (60°C for 12 h). OF properties were analyzed by official methods by AOAC, i.e. mineral composition was evaluated by atomic absorption equipment; color; water absorption index (WAI); milk absorption index (MAI); oil absorption capacity (OAC); and foam capacity (FC) required mixtures with water, milk and oil, separation and gravimetry, respectively; and microstructure was determined by a scanning electron microscope. Findings Results showed the potential OF has as a source of protein (24.74 g/100 g) and dietary fiber (58.27 g/100 g). Regarding its color after the drying process, OF was markedly yellow (b* parameter 20.16). Its WAI was 3.62 g/g, MAI was 4.33 g/g, OAC was 3.68 g/g and FC was 1.32 per cent. The microscopic analysis of OF showed that both loose and agglomerated particles had irregular structures and indefinite forms. Originality/value Production of flour from wet okara can be an alternative use of this by-product. This study showed important characteristics of OF and its possible application to the food industry. Thus, OF was shown as a potential ingredient with high nutritional value.
RESUMOA Doença de Hirschsprung (DH) é uma malformação congênita que afeta a motilidade intestinal pela ausência de gânglios autônomos durante a embriologia intestinal. Nesse contexto, a região aganglionar torna-se aperistáltica, constituindo um obstáculo ao trânsito intestinal. O objetivo deste estudo é descrever um caso de Doença de Hirschsprung (DH) em um paciente e discutir sobre o método de diagnóstico e tratamento empregado no recém-nascido. Consistiu-se em um estudo observacional, do tipo relato de caso, no qual obtiveram-se através de dados por meio de prontuário fornecido por uma Instituição Hospitalar Pública do município de Anápolis-GO. O paciente neonatal apresentou um quadro de distensão abdominal e ausência de eliminação de mecônio nas 48 primeiras horas de vida. O diagnóstico da doença de Hirschsprung deu-se por meio da avaliação da sintomatologia, estudo histopatológico e radiografia de abdome. Como medida terapêutica realizou-se uma laparotomia exploratória e ressecção do segmento aganglionar com reanastomose do intestino até o ânus preservando os músculos do esfíncter anal pela técnica de abaixamento transanal de Soave. Por se tratar de uma doença rara e pouco conhecida faz-se necessário um breve conhecimento da patologia e da atuação da equipe multidisciplinar para descartar os diagnósticos diferenciais existentes e iniciar o tratamento o mais breve possível.
Bioactive compounds that promote beneficial effects on human health, such as phytochemicals, are increasingly being consumed in the form of functional foods or nutraceuticals with the aim of promoting human well-being, health, and performance. However, often nutraceuticals do not show good efficacy in vivo due to their low water solubility, low oral bioavailability, degradation of the gastrointestinal tract, ease of oxidation, and poor absorption by the human body. This problem can often be overcome by nanoencapsulation of bioactive compounds into delivery systems based on biopolymeric nanoparticles. The nanoencapsulation of bioactive compounds can increase their bioavailability due to the size of particles containing these compounds, the availability of these bioactive compounds to the gastrointestinal tract, the ability to penetrate the mucus layer, and by making the compounds available for direct uptake by cells. Biopolymeric nanoparticles can be engineered to survive the gastrointestinal tract and then deliver the bioactive compounds at a certain point, maximizing their potential benefits for human health. In this chapter, bioavailability and delivery mechanisms of nutraceuticals in biopolymer-derived nanoparticles are described and discussed.
A depressão é uma patologia extremamente prevalente na sociedade moderna. Seu diagnóstico é realizado a partir de critérios e da exclusão de causas orgânicas por um médico, tendo como componente mais frequente de tratamento o uso de psicofármacos. O objetivo deste trabalho é o entendimento a respeito de novas pesquisas que englobam promissoras vias de tratamento adjuvante ao exercido atualmente. São discutidos ao longo do trabalho diferentes nutrientes, assim como perspectivas de aplicabilidade dos mesmos e sua relação com os processos fisiológicos e metabólicos. Também é descrita a relação mediada pela microbiota e processos inflamatórios que influenciam o eixo cérebrointestino, corroborada por uma melhora do quadro a partir do consumo de elementos mais nutritivos. Esta pesquisa surge a partir de revisão bibliográfica, baseada em publicações científicas dos últimos cinco anos, abordando a conexão entre aspectos nutricionais e a depressão. Concluiu-se que alguns nutrientes se mostraram mais efetivos do que outros, sendo a doença dependente de diversos outros fatores, como aspectos familiares, local de habitação etc. Entretanto, os resultados são bastante promissores, inserindo discussões e perspectivas importantes do ponto de vista de saúde pública.
