ResumenSe ha estudiado una formulación que incluye pulpa de lulo con el fin de aprovechar este fruto para la obtención de aperitivos vínicos. Se utilizó la siguiente formulación: Pulpa de lulo (1%), agua (80,5%), azúcar (18%), ácido cítrico (0,03%), fosfato diamónico (0,03%) y levadura (0,42%). Los análisis microbiológicos realizados estuvieron dentro de los rangos permitidos. La fermentación se detuvo a los diez días, y luego se determinaron análisis fisicoquímicos. Posteriormente se clarificó durante cinco días. La acidez titulable fue de 0,06%, la acidez volátil de 0,11% y el pH de 3,24. Se obtuvo una bebida con un contenido alcohólico de 11,3 grados (°GL), lo cual es suficiente para ser considerada como un aperitivo vínico de calidad comparable con la de los productos existentes en el mercado. El rendimiento para la pulpa fue de 66,7%. The following formulation was employed: Lulo pulp (1%), water (80.5%), sugar (18%), citric acid (0.03%), diammonium phosphate (0.03%) and yeast (0.42%). Microbiological analyzes were performed and were found within allowable ranges. The fermentation was stopped after ten days, and then physicochemical analyses were done. After that the product was clarified during five days. Titratable acidity was 0.06%, volatile acidity was 0.11% and pH 3.24. A beverage with an alcohol content of 11,3 percent alcohol (°GL) was obtained. This alcoholic level is enough to be considered as a vinous appetizer of quality comparable to existing products. The yield for the pulp was 66.7%.

Se determinó densidad relativa a 20°C, índice de refracción y solubilidad de los aceites esenciales en etanol (70% v/v). La composición química se evaluó mediante cromatografía de gases/espectrómetro de masa. El aceite esencial presentó rendimientos con valores de 0.09% (HD) y 0,92% (MWHD). El aceite fue analizado por cromatografía de gases acoplada a espectrometría de masas. Los compuestos principales encontrados en el aceite obtenido por MWHD fueron el timol y carvacrol con porcentajes relativos de 73.36% y 10.94%, respectivamente, mientras que en el aceite obtenido por HD fueron acetato de eudesmol (22.44%) y acetato de isolongifolol (21.75%). Se concluye que la MWHD es una técnica rápida, eficiente y relativamente económica en comparación con la HD convencional. Palabras clave: aceite esencial, Minthostachys mollis, hidro-destilación, radiación con microondasAbstract Essential oil obtained from the leaves of the vegetal species Minthostachys mollis was extracted and characterized by hydro-distillation (HD) and radiation-assisted microwave hydro-distillation (RAMH). Relative density at 20ºC, refractive index and solubility of the essential oils in ethanol (70% v/v) were determined. The chemical composition was determined using gas chromatography/ mass spectrometer. The essential oil presented values yields of 0.09 % (HD) and 0.92% (MWHD). The oil was analyzed by gas chromatography coupled with mass spectrometry. The main compounds found in the oil obtained by MWHD were thymol and carvacrol with relative rates of 73.36% and 10.94%, respectively, while in the oil obtained by HD were eudesmol acetate (22.44%) and isolongifolol acetate (21.75%). According to the results the MWHD is a fast, efficient and relatively economical technique compared to the conventional HD.
