The food provided in nursery schools should meet the sanitary and nutritional requirements needed to promote a child's intellectual and physical health. Therefore, training of the School Nutrition Technicians (SNT) in good food handling practices is essential to ensure the safety of the foods prepared. This study was aimed at evaluating the microbiological quality of lettuce salads consumed by children in public nursery schools in the municipality of Cuiabá, Mato Grosso, Brazil. The lettuce salad samples were collected in two distinct phases: before and after training of the SNTs in good food handling practices by the nutritionists of the school meals program of the municipality of Cuiabá, according to the school calendar routine. Thirty fresh (in natura) lettuce samples that had not been sanitized (representing samples obtained from the supplier) were collected for the detection of Salmonella spp. and 240 prepared lettuce salad samples (salads ready for consumption), for the detection of Salmonella spp. and the heat-tolerant coliform count. The genus Salmonella was not detected in either of the phases of the study. However, prior to training, 54% of the lettuce salad batches were contaminated with heat-tolerant coliforms, but after training 100% of the batches were considered to be in satisfactory sanitary conditions. In conclusion, offering training courses on good food handling practices to food handlers in school meals units was capable of reducing contamination.
Instituto Federal de Mato Grosso -campus Cuiabá-Bela Vista, Cuiabá, Mato Grosso, BrasilObjetivou-se neste trabalho avaliar a qualidade físico-química de néctares industrializados sabores maracujá e pêssego e comercializados nos supermercados da cidade de Cuiabá-MT. Foram avaliadas quatro marcas de néctares industrializados, para cada sabor, analisando-se os parâmetros físico-químicos acidez total titulável de ácido cítrico, pH, relação SS/acidez total, teor de vitamina C, sólidos solúveis (ºBrix), glicídios não redutores em sacarose, glicídios redutores em glicose e totais, conforme normas do Instituto Adolf Lutz. As médias obtidas foram submetidas a análise de variância e submetidas ao teste de Scott-Knott a 5% de significância. A acidez total (g.100g -1 ) para as marcas B e D apresentaram médias estatisticamente iguais. No entanto para o sabor maracujá da marca B o valor de pH foi maior (3,27±0,02a). Não houve diferença estatisticamente significativa na relação sólidos solúveis/acidez titulável (SS/AT). Para vitamina C todos os valores obtidos estavam abaixo do determinado pela legislação. Para sólidos solúveis totais as médias observadas para o sabor maracujá atenderam o mínimo estabelecido pela legislação. No entanto para o sabor pêssego, as marcas A e B apresentaram menores valores e abaixo do que estabelece os valores mínimos pela legislação vigente. Açúcar não redutor da marca A apresentou maiores valores para os sabores analisados. Conclui-se que nem todos os parâmetros analisados atendem a legislação vigente. Os parâmetros como pH, vitamina C, açúcares não redutores, em sacarose não apresentaram padrão de identidade e qualidade estabelecidos, sendo necessário a padronização pelos órgãos competentes para que se garanta a qualidade do produto final para o consumidor.
