RESUMO -Visando melhoria da qualidade e estabilidade de óleos essenciais cítricos, a diminuição do teor de limoneno pode ser feita por extração líquido-líquido, processo baseado na coexistência de duas fases líquidas. O estudo das propriedades físicas das fases é importante para escalonamento de equipamentos industriais. Os valores de densidade e viscosidade das fases provenientes do estudo do equilíbrio de fases do sistema limoneno + linalol (óleo essencial modelo) e etanol + água (solvente) foram determinados e utilizados para ajuste de parâmetros de modelos empíricos (Regra da Mistura Simples e Grunberg-Nissan). Maiores valores de viscosidade estão relacionados com o aumento da concentração de linalol na fase terpênica. O aumento do teor de água no solvente afetou expressivamente os valores de propriedades físicas da fase solvente. Em geral, os modelos se ajustaram de forma satisfatória aos dados experimentais, sendo que menores desvios foram relacionados aos dados da fase rica em solvente.
INTRODUÇÃOÓles essenciais são misturas compostas por centenas de componentes, podendo ser divididos em dois grupos: compostos altamente voláteis, tais como hidrocarbonetos terpênicos (mono e sesquiterpenos) e seus derivados oxigenados (aldeídos, álcoois, ésteres etc.) e compostos poucos ou não-voláteis (pigmentos e ceras). Entre os dois grupos, os compostos voláteis, mais especificamente os compostos oxigenados, merecem maior destaque por serem os principais responsáveis pelo aroma e sabor característico do óleo essencial. Sendo assim, óleos essenciais com maior teor de compostos oxigenados apresentam maior capacidade aromatizante e, consequentemente, maior valor no mercado (GONÇALVES et al., 2014).Os hidrocarbonetos terpênicos, por outro lado, são compostos altamente susceptíveis à reações de degradação, como polimerização (formação de resinas), oxidação por exposição ao ar e à luz. Esta deterioração pode resultar em off-flavor ocasionando alterações sensoriais significativas no aroma original do óleo (LAWRENCE, 1995;HAYPEK et al., 2000), contribuindo negativamente na qualidade dos óleos essenciais. Devido este fato, um processo de retirada dos hidrocarbonetos, conhecido como desterpenação, é necessário.
