Observa-se, em tubérculos de batata submetidos a baixas temperaturas, aumentos nos teores de açúcares redutores, os quais, no momento da fritura, provocam o escurecimento do produto, inviabilizando-o comercialmente. Avaliou-se a concentração de carboidratos em duas cultivares de batata (Pérola e Atlantic), armazenados em duas condições de temperatura. Os tubérculos foram produzidos nos cultivos de outono e primavera de 1999. Logo após a colheita, os tubérculos foram divididos em dois lotes, padronizados quanto ao tamanho, armazenados durante 40 dias, em condições de ambiente (21±3ºC para a produção de outono; 24±2ºC para a produção de primavera) e sob refrigeração (2±1ºC). Em intervalos regulares de dez dias, iniciando-se na data de armazenamento dos tubérculos (tempo zero), coletaram-se amostras de duas regiões dos tubérculos (central e periférica), para a determinação dos teores de amido, sacarose, carboidratos solúveis totais e açúcares redutores. Os teores de amido não foram alterados pelas condições de armazenamento, enquanto que os demais carboidratos apresentaram elevação quando os tubérculos foram submetidos à refrigeração, principalmente entre 10 e 20 dias de armazenamento. Contudo, as variações em respostas à baixa temperatura apresentaram-se diferenciadas em função do genótipo, da época de cultivo das plantas e das regiões dos tubérculos.
Tubérculos de batata das cultivares Eliza, Pérola e Atlantic foram armazenados a 2ºC durante 10 dias e, posteriormente, recondicionados a 15ºC por 10 ou 20 dias, de forma a verificar a eficiência destes tratamentos em reverter o adoçamento associado ao armazenamento a baixas temperaturas. O recondicionamento foi associado a uma redução nos teores de sacarose em todas cultivares, uma redução na atividade da sacarose-fosfato sintase e UDP-glicose pirofosforilase. Houve também redução na atividade da sacarose sintase, e redução temporária na atividade da invertase, o que não aconteceu de uma forma homogênea entre as cultivares. O recondicionamento também reduziu o teor de glicose, mas somente nas cultivares Pérola e Atlantic. Esta redução foi linear com o tempo de recondicionamento, o que sugere que maior redução do adoçamento possa ser observada com a utilização de períodos maiores de recondicionamento. Não foi observada alteração no teor de amido, embora tenha ocorrido redução temporária nas atividades da amido fosforilase e amidolítica total em algumas cultivares. Em conjunto, esses dados demonstram que o recondicionamento, mesmo por curtos períodos de tempo (20 dias) ou temperaturas mais amenas (15ºC), resulta em alterações metabólicas heterogêneos em diferentes cultivares, e que podem contribuir significativamente para a redução do adoçamento de tubérculos nas cultivares Pérola e Atlantic.
N o Brasil a produção de batata (Solanum tuberosum L.) estendese por quase todo o ano, a fim de atender às necessidades de suprimento da demanda de consumo in natura e da indústria. Parte da produção é armazenada em curto prazo em diferentes condições. As baixas temperaturas mantêm o produto, mas causam diminuição da qualidade, em virtude da elevação dos teores de açúcares nos tecidos (Burton, 1989), que provocam o escurecimento durante o processamento em altas temperaturas, tornando-o comercialmente inaceitável (Davies e Viola, 1992). O acúmulo de açúcares redutores nos tubérculos mantidos sob baixas temperaturas é o resultado da conversão do amido (Rees et al., 1981). A senescência das membranas do amiloplasto da batata, decorrente de baixas temperaturas (O'donoghue et al., 1995), ou mesmo a fragilidade destas membranas, podem estar associadas ao adoçamento (Isherwood, 1976). Muitos argumentos têm sido utilizados para explicar o acúmulo de açúcares induzidos pelo frio, incluindo o aumento na atividade de uma ou mais enzimas que degradam o amido (Cochrane et al., 1991; Claassen et al., 1993;Cottrell et al., 1993), a maior concentração de hexose fosfato como resultado da fosfofrutocinase e de outras enzimas na glicólise (Pollock e Rees, 1975; Dixon e Rees, 1980; Trevanion e Kruger, 1991), o aumento na atividade das enzimas envolvidas na sín-tese da sacarose como a sacarose fosfato sintase (Sowokinos, 1990) e o aumento na atividade da invertase (Richardson et al., 1990; Pressey e Shaw, 1966). Embora haja forte indicação, pela comparação entre cultivares e transformantes, que a invertase é importante no controle da velocidade de degradação da sacarose para açúcares redutores, sua atividade não está correlacionada com o acúmulo total de açúcar, que ocorre somente em temperaturas de 5 o C (Deiting et al., 1998), é identificada aumento na atividade de amidolítica sob refrigeração (Richardson et al., 1990;Zrenner et al., 1996).As invertases citoplasmáticas neutras e alcalinas são bem menos caracterizadas, mas em contraste com as invertases ácidas, essas enzimas parecem ser específicas para sacarose, ao passo que as invertases ácidas além da sacarose, hidrolisam outros oligossacarídeos contendo resíduos de ß-frutose, tais como rafinose e estaquiose (Sturm, 1999).
