The objective of this research was to evaluate the sensory acceptance and shelf life of a fresh cheese using dry bromelain extract as a coagulating agent. The dry bromelain extract was used in three concentrations (5%, 10% and 15% w / w) and the milk was used craw and pasteurized, for a total of six treatments under study. A sensory analysis was carried out and the useful life (sensorial, physicochemical and microbiological) of the treatment with greater acceptance was determined. The results showed that the cheeses obtained with greater sensory acceptance were those made with 5% w / w of bromelain dry extract regardless of the type of milk used (raw or pasteurized). The useful life of the selected product (T2) at the physicochemical level is 26 days, however sensory and microbiologically the product is of good quality until day 14. Therefore, the use of dry bromelain extract as a vegetable coagulant showed a great potential as a substitute for traditional rennet.
<p>Esta investigación buscó determinar la cinética de degradación de la vitamina C en un producto en polvo elaborado a base de pulpa de mango (Mangifera indica L. var. Hilacha) y lactosuero, con el fin de conocer el efecto de la temperatura en su conservación y además evaluar el comportamiento de los parámetros L*, a*, b* y la diferencia total del color (ΔE) en el producto. La vitamina C se determinó mediante el método aoac 967.21/90, con 2,6-diclorofenol indofenol; mientras que el color se cuantificó con un colorímetro Color Flex EZ marca HunterLab. La vitamina C exhibió mayor estabilidad en el producto en polvo almacenado a una temperatura de 4 °C, con una concentración (al término de la octava semana de muestreo) de 13,94 ± 1,2 mg/100 g por muestra, presentando una cinética de degradación de primer orden con valores de k1 de 0,014 y 0,041 mg/100 g/por semana para las temperaturas de 4 °C y 28 °C, respectivamente. Las mayores variaciones en el color se dieron en las muestras almacenadas a 28 °C, lo cual indica la influencia de la temperatura en el cambio de los componentes del producto. Los parámetros L*, a* y b* se vieron menos afectados a la temperatura de conservación de 4 °C y sus valores se ajustaron a un polinomio de segundo orden.</p>
Transformación y agroindustria Efectos del Bifidobacterium animalis y dos cepas deLactococcus lactis en el queso costeño ResumenEn esta investigación se evaluaron los efectos de la adición de cepas de Bifidobacterium animalis, Lactococcus lactis spp. lactis y Lactococcus lactis spp. cremoris, y la variación de la concentración de cloruro de sodio en las características fisicoquímicas del queso fresco costeño. Se realizaron cinco tratamientos: T1 (control, 2 % sal), T2 (1,5 % sal), T3 (2 % sal), T4 (2,5 % sal) y T5 (3,5 % sal). Los microorganismos se adicionaron a todos los tratamientos con excepción de T1 (control), y se almacenaron a una temperatura de 4-6 ºC, con un muestreo por triplicado en los días 1, 9 y 18. Se realizaron recuentos de las cepas agregadas y medición de las características fisicoquímicas del queso (pH, acidez, humedad, sólidos totales, cenizas, proteína, materia grasa y cloruro de sodio). El pH y la acidez presentaron diferencia significativa entre los tratamientos, con variación inversa de su valor. El pH fue superior en los tratamientos con mayor contenido de cloruro de sodio y con menores recuentos microbianos. El porcentaje de sólidos totales, proteína, grasas, cenizas y NaCl aumentó con la disminución de la humedad de las muestras a medida que transcurría el tiempo de almacenamiento. El aumento de la concentración de sal en los tratamientos redujo significativamente los recuentos del B. animalis, L. lactis spp. lactis y L. lactis spp. cremoris durante los primeros nueve días de almacenamiento, con una mayor viabilidad en los tratamientos con 1,5 % y 2 % de cloruro de sodio. 391-402 AbstractThe objetive of this study was to evaluate the effects of the addition of strains of B. animalis, L. lactis ssp. lactis and Lactococcus lactis ssp. cremoris and variation of the concentrations of sodium chloride in the physicochemical characteristics of costeño cheese. Esta investigación tuvo como objetivo evaluar un queso procesado untable obtenido de queso costeño (queso fresco), a través de sus características fisicoquímicas, microbiológicas y sensoriales y vida útil. Se usó un diseño experimental al azar, y los datos se procesaron mediante Análisis de varianza y Test de Tukey. Los experimentos fueron por triplicado utilizando mezclas de queso costeño (fresco y envejecido) con diferentes porcentajes (40, 50 y 60%) y distintos tiempos de envejecimiento del queso costeño (15 y 30 días). El contenido de Humedad, Proteína, Acidez y pH obtenido en los quesos fue semejante a otros quesos fundidos, siendo el contenido de grasa y sal superior e inferior, respectivamente. Las características microbiológicas cumplen con lo establecido para este queso. El tratamiento con mayor aceptación sensorial fue el compuesto por 40% de queso costeño envejecido por 15 días y 60% de queso costeño fresco, mientras que la vida útil fue de aproximadamente 23 días.
