Soybean and corn oils are among the most popular vegetable oils, and are ingredients which are widely used in cooking and in the food industry. These oils contain many unsaturated fatty acids such as oleic, linoleic and linolenic acids, which makes them easily oxidized by oxygen. Extensive efforts are being made to prevent or minimize vegetable oil oxidation through the development of antioxidants. Phenolic antioxidants which are present in some extracts can be used as food additives to prevent lipid oxidation. In this study chromatographic analyses (HPLC and GC) of the Pluchea quitoc hydroalcoholic extract were performed. The content of phenolic compounds by the Folin-Ciocalteau method and the antioxidant properties against radicals 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2′-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) were also evaluated. The effect of samples prepared with soybean and corn oils enriched with Pluchea quitoc hydroalcoholic extract was determined and compared with samples of these oils which were free of antioxidants and with samples containing the synthetic antioxidant BHT. The results showed potential for application of the extract. A high content of phenolic compounds (314 milligrams of gallic acid equivalents (GAE)/g of extract) and good IC50 values were detected for the inhibition of the radicals DPPH and ABTS (13.2 µg·mL-1 and 5.6 µg·mL-1). In the evaluation of the oxidative stability of the oils enriched with this extract, it was found that at 1% concentration it was possible to obtain values of induction period (IP) close to the samples with added BHT.
Resumo A utilização de matérias-primas funcionais vem crescendo nos últimos anos e tem como objetivo fornecer, além de nutrientes essenciais, compostos associados a efeitos benéficos à saúde. Dentre os ingredientes com alegações funcionais, a inulina tem sido considerada uma importante fibra alimentar. Além disso, o conhecimento e a utilização de Plantas Alimentícias Não Convencionais (PANCs) vêm recebendo destaque, valorizando a biodiversidade e a alimentação mais sustentável. Assim, o presente estudo teve como objetivo desenvolver sorvetes utilizando matérias-primas não convencionais, a planta ora-pro-nóbis e a inulina, a fim de produzir alimento funcional e inovador. Foram elaboradas duas formulações de sorvetes, que se diferenciaram apenas pela quantidade de inulina. Na Formulação 1 (F1), o sorvete de ora-pro-nóbis recebeu adição de 3% de inulina e, na Formulação 2 (F2), o sorvete de ora-pro-nóbis recebeu adição de 6% de inulina. Foram realizadas análises físico-químicas e de aminoácidos das folhas de ora-pro-nóbis. Posteriormente, foram conduzidas as análises microbiológicas, físico-químicas e sensoriais das formulações de sorvete. Os resultados foram comparados estatisticamente pelo método t-Student com nível de significância de (p˂0,05). O teor proteico das formulações foi elevado, 10,54 ± 2,20% para F1 e 12,13 ± 0,57% para F2. Não houve diferença significativa nos conteúdos de lipídios, cinzas, proteínas e fibra bruta entre as formulações. As amostras estão de acordo com os padrões microbiológicos estabelecidos pela legislação. Com relação à análise de incorporação de ar, a F2 apresentou valor superior (41,26 ± 0,13%) comparada à F1 (36,36 ± 0,17%). Além disso, a F2 apresentou menor taxa de derretimento (1,20 g/minuto) que a F1 (3,38 g/minuto). Os sorvetes apresentaram boa aceitação sensorial e podem servir como opção de consumo para as pessoas que procuram um produto saudável e com elevado teor de proteínas.
A pesquisa teve como objetivo o desenvolvimento de sorvete funcional de hibisco sem lactose, com adição de inulina, e avaliou as características físico-químicas, microbiológicas e aceitação sensorial. Foram desenvolvidas duas formulações de sorvete com diferentes concentrações de inulina: Formulação 1 (F1), sorvete de hibisco com adição de 3% de inulina; e a Formulação 2 (F2), sorvete de hibisco com adição de 6% de inulina. As formulações apresentaram os resultados nas análises: umidade (F1: 63,31±4,29%; F2: 66,75±0,35%); lipídeos (F1: 3,74±0,73%; F2: 3,77±0,23%); cinzas (F1: 0,86±0,14%; F2: 0,98±0,27%); proteína (F1: 1,34±0,09%; F2: 1,22±0,23%); fibra bruta (F1: 0,76±0,18%; F2: 0,77±0,08%) – e não diferiram estatisticamente entre si (p ≤0,05). A maioria dos julgadores avaliou as amostras como “gostei moderadamente”. Conclui-se que os sorvetes de hibisco com adição de inulina apresentaram resultados interessantes, que indicam a viabilidade do desenvolvimento do produto que poderá atender dietas específicas e restritas, além de apresentar qualidade nutricional e sensorial.
