Celem badań było określenie zmian zachodzących we właściwościach kleiku mącznego, ciasta i pieczywa pszennego pod wpływem dodatku maltodekstryn. Materiał badawczy stanowiły handlowe mąki pszenne (typu 550 i 750) oraz maltodekstryny niskoscukrzone (DE = 9,4) i średnioscukrzone (DE= 16,8). Maltodekstryny dodawano w ilości: 1, 2, 3 i 4 % w stosunku do naważki mąki. Jakość mąki pszennej oceniono na podstawie zawartości białka ogółem, wydajności glutenu i jego rozpływalności oraz wskaźnika sedymentacyjnego. W mące pszennej bez i z dodatkiem maltodekstryn wykonano oznaczenie liczby opadania. Próbki poddano również ocenie amylograficznej, farinograficznej i ekstensograficznej oraz wykonano laboratoryjny wypiek chleba metodą jednofazową. Użyte mąki pszenne cechowały się dobrą wartością wypiekową. Pod wpływem dodatku maltodekstryn obserwowano tendencję zmniejszenia maksymalnej lepkości kleików mącznych. Przyczyniały się one do zmniejszenia wodochłonności mąki oraz wydłużenia czasu rozwoju i stałości ciasta, co świadczyło o wzmocnieniu jego wytrzymałości na obróbkę mechaniczną. Dodatek maltodekstryn powodował także uplastycznienie ciasta wyrażające się zwiększeniem rozciągliwości oraz zmniejszeniem maksymalnego oporu na rozciąganie. Zastosowanie 1-4 % dodatku maltodekstryn do mąki pszennej, zwłaszcza maltodekstryn średnioscukrzonych do mąki typu 550 o niskiej aktywności amylolitycznej, spowodowało zwiększenie objętości pieczywa. Pod wpływem stosowanych dodatków maltodekstryn nie ulegała zmianom wydajność chleba. Obserwowano natomiast tendencję zmniejszania porowatości miękiszu.
