We propose a collective induction treatment as an aggregator of information and preferences, which enables testing whether consumer preferences for food quality elicited through experimental auctions are robust to aggregation. We develop a two-stage estimation method based on social judgment scheme theory to identify the determinants of social influence in collective induction. Our method is tested in a market experiment aiming to assess consumers' willingness-to-pay for rice quality in Senegal. No significant choice shift was observed after collective induction which suggests that consumer preferences for rice quality are robust to aggregation. Almost three quarters of social influence captured by the model and the variables was explained by social status, market expertise and information.
La hausse des prix des denrées alimentaires en 2008 a incité de nombreux États africains à adopter des stratégies d'autosuffisance alimentaire. Cependant, si la production augmente aux rythmes prévus par les programmes, quels débouchés trouvera-ton pour les surplus ? La permanence du déficit rizicole ouest-africain est inhérente à une conception qui n'a pas pris en compte les exigences des consommateurs et l'incidence de la qualité sur la compétitivité des riz locaux et importés sur les marchés urbains. Il existe deux types de compétitivité : la compétitivité-prix et la compétitivité-qualité. La présente étude s'intéresse à l'analyse de la compétitivité-qualité du riz local sur quatre marchés urbains africains par le biais des enchères expérimentales. Les résultats expérimentaux mettent ainsi en évidence : i) que le riz local africain peut être compétitif vis-à-vis du riz importé à condition que sa qualité soit adaptée aux exigences des consommateurs ; et ii) que la qualité, la labellisation et l'information peuvent jouer un rôle de catalyseur pour renforcer la compétitivité des chaînes de valeurs du riz en Afrique.
