INTRODUCCIÓNEl mango (Mangifera indica) es un alimento fuente de ácido ascórbico (9.79 a 186 mg /100 g), carotenoides (1159 a 3000 mg/100 g) y (poli)fenoles presentes en la parte comestible de la fruta que le confieren capacidad antioxidante (1-10). Es una de las frutas tropicales más importantes del mundo en términos de producción, superficie cultivada, y popularidad, con una producción global que excede los 27 millones de toneladas, siendo el mayor cultivo tropical seguido por el banano, la piña, papaya y aguacate (11).La calidad nutracéutica del mango ha sido estudiada en función de su capacidad antioxidante, el contenido de (poli) fenoles y carotenoides totales en variedades como Francis, Kent, Ataulfo, Tommy Atkins, Haden (3,5,6,(12)(13)(14)(15)(16) según la Food Agriculture Organization (FAO), con un aporte de 239 mil toneladas, equivalente al 0.6% de la producción mundial (20).En Colombia, 39% del área ocupada por esta fruta corresponde a plantaciones silvestres de mango variedad hilacha, con cero tecnificación y carencia absoluta de asistencia técnica; le siguen las variedades Tommy Atkins (20%), Keitt (11%) y con 5% el mango de azúcar (20); ésta última cultivada principalmente en la región norte de Colombia, cerca de la Costa Atlántica, cuyo cultivo se ha extendido a los departamentos de Cundinamarca, Tolima y Huila. El mango de azúcar presenta una alta demanda como fruta fresca en el exterior por su tamaño pequeño, escasa fibra, buen aroma y sabor; además desde el punto de vista comercial es la variedad más rentable pues tiene casi diez meses de buen precio en comparación con las anteriores (21).Esta investigación consistió en caracterizar la capacidad antioxidante y el contenido de compuestos bioactivos presentes en diferentes estadios de maduración del mango de azúcar. Introducción: El consumo de derivados cárnicos en universitarios se ha venido incrementando en los últimos años, convirtiéndose en un factor de riesgo en esquemas de alimentación saludable, por lo cual es de vital interés por parte de los investigadores en las áreas de la salud y la nutrición, identificar las preferencias y frecuencia de consumo de estos productos para establecer estrategias de intervención. Material y Métodos: El tamaño de la muestra fue de 400 estudiantes, seleccionados aleatoriamente de acuerdo con los factores de ponderación: sexo, nivel socioeconómico y tipo de universidad, teniendo en cuenta un intervalo de confianza del 95% y un error máximo permisible del 5%. Los datos fueron analizados utilizando análisis multivariado de la varianza (MANOVA), análisis de comparación método Z. Resultados: Se encontró que el consumo de derivados cárnicos tiene una alta frecuencia y mayor preferencia de consumo en hombres (p=0,0139), en estrato bajo (p=0,0457) y en universidades públicas (p=0,0311). Conclusiones: El consumo de embutidos en universitarios es alto, especialmente en el sexo masculino, por lo cual se requiere implementar programas de educación sobre hábitos de consumo saludable. Introducción: El estudio de estilos de vida saludable en universitarios es parte de las estrategias institucionales para reducir la prevalencia de sobrepeso y obesidad. Por tal razón, el objetivo de esta investigación fue caracterizar en la población universitaria de la ciudad de Medellín, Colombia, el consumo y el conocimiento referente a la importancia del consumo adecuado de productos cárnicos. Material y Métodos: El tamaño de la muestra fue de 400 estudiantes, seleccionados aleatoriamente de acuerdo con los factores de ponderación: género, nivel socioeconómico y tipo de universidad, teniendo en cuenta un nivel de confiabilidad del 95% y un error máximo permisible del 5%. Resultados: Se encontró que el pollo es la carne preferida por los universitarios, seguido del pescado; la carne de cordero es la de menor preferencia; se encontró mayor consumo en el género masculino (p<0,05) de pescado, conejo y cabra. Con respecto al gusto que poseen los estudiantes por los diferentes cárnicos, se encontró mayor gusto entre los hombres (p<0,05) y en las universidades públicas (p<0,0001). En cuanto a los conocimientos sobre el valor nutricional, las mujeres tienen un mayor nivel que los hombres (p<0,05) y los estudiantes de estrato bajo son los que menos conocen sobre las propiedades de los cárnicos (p<0,05). Conclusiones: Teniendo en cuenta el bajo conocimiento de los universitarios sobre la importancia del consumo de cárnicos, es necesario implementar programas de educación e intervención para mejorar sus hábitos alimenticios.
