Actualmente, campesinos y habitantes de pequeños municipios rurales en la región de la Sierra de Canastra, en el Estado de Minas Gerais - Brasil, que tienen en la producción y comercialización de quesos artesanales una de las bases de su economía, ven sus modos de vida amenazados por restricciones sanitarias y ambientales que llegan a su región anteponiéndose a prácticas y saberes establecidos culturalmente. En este artículo intentamos describir cómo algunas leyes y normativas, impuestas a partir de saberes administrativos y de técnicos especializados, llegan a los espacios cotidianos de estas familias y pueden tener efectos opuestos a los pretendidos, llevando a la desestructuración de modos de vida que permitían una mayor preservación de los recursos naturales. Una de las consecuencias es el agravamiento de los incendios forestales, así como el fortalecimiento de modelos industriales de producción agropecuaria, que acarrean una pérdida general de la biodiversidad.
This article results from ethnographic fieldwork in farms that produce artisanal cheese, in the southwest of Minas Gerais, Brazil. The analysis focuses on the meanings of the practices developed there, especially concerning livestock, which conflict with recommendations of technicians working in the public sector. The latter have tried to manage both human and non-human lives, within a process of development supported by legislation and the insertion of technology, changing the traditional productive practices. This top-down managerial strategy has overshadowed the complex knowledge and the modes of existence empirically observed in these areas. I demonstrate how local practices of mutuality have provided answers that reinvent meanings for life.
Resumo Este artigo analisa a relação da produção de queijos artesanais em Minas Gerais com imposições da regulação sanitária, configuradas em instrumentos e mecanismos de biossegurança, conformados em mercados internacionais, que constroem uma imagem da produção de queijos feitos nas roças, fortemente enraizados culturalmente, como “atrasada” e “anti-higiênica”. As normas sanitárias exigem a contratação de responsáveis técnicos (engenheiros de alimentos, veterinários, nutricionistas) e consideram a formação técnica e a produção em moldes industriais como intrinsecamente mais seguras. E, em sentido contrário, criam suspeitas que populações camponesas estejam produzindo alimentos contaminados e inseguros. Ao converterem seres microscópicos em ameaça à sociedade, tais normas se constroem com uma microbiopolítica, constituindo-se como fonte de poder que associa moralmente pobreza e risco. E criam barreiras à comercialização das produções camponesas, interferindo em seus modos de vida. Baseado em trabalhos etnográficos, o artigo aborda como essas populações interagem com algumas das prescrições das normas sanitárias e conhecimentos técnico-científicos, que chegam a elas através da atividade de fiscais sanitários e de técnicos ligados à extensão rural.
Cet article analyse la trajectoire du fromage minas artisanal produit dans la Serra da Canastra, dans l'état de Minas Gerais, au Brésil. Il met l'accent sur son passage par un centre de maturation, compris ici comme un processus rituel et une performance de cet aliment. Ce passage est analysé en tant que mécanisme particulier de transition biologique et symbolique de l'aliment d'un état à l'autre, en un processus comprenant un vaste réseau de différents acteurs et de moments composant la « vie sociale » du fromage. L'analyse cherche à récupérer des aspects de cette trajectoire en décrivant comment celui-ci occupe un lieu privilégié dans la formation de liens sociaux et cosmologiques. Elle cherche aussi à montrer comment le caractère artisanal de l'aliment délimite des différences non seulement dan son propre identité, mais aussi dans celle des acteurs impliqués. AbstractThis article analyzes the way of the artisanal cheese from Canastra, Minas Gerais state, Brazil, emphasizing its passage by to a center of maturation. This process is taken as a ritual process and as a food performance.That passage will be examined as a particular mechanism for the organic and symbolic transition of the food from one state to another. This process encompasses a wide network of different actors and moments that make up the 'social life' of the cheese. In this text, I try to recover moments of its path describing how the artisanal food occupies a privileged place in the creation of social and cosmological ties. I also seek to demonstrate how the cheese artisanal characteristics line off differences not only in its own identity, but also in the social agents involved in its making. ResumoEste artigo analisa a trajetória do queijo minas artesanal, produzido na Canastra (Minas Gerais, Brasil) dando ênfase a sua passagem por um centro de maturação, tomada aqui como um processo ritual e de desempenho do alimento. Tal passagem será analisada como um mecanismo particular para a transição biológica e simbólica do alimento de um estado a outro, num processo que engloba uma rede ampla de diferentes atores e momentos que compõem a "vida social" do queijo. No texto, procuro recuperar aspectos dessa trajetória descrevendo como o queijo ocupa um lugar privilegiado na formação de vínculos sociais e cosmológicos.
