El uso de tecnologías de IV Gama se promueve para prolongar la vida útil de vegetales frescos. El objetivo de este trabajo fue evaluar el efecto de un recubrimiento comestible (RC) formulado con una mezcla de gel de aloe vera (AV) y el aceite de Rosa Mosqueta (RM) para prolongar la vida útil de rabanito de IV gama. En la primera etapa, la materia prima se caracterizó fisicoquímicamente. Luego se diseñó un diagrama de flujo del proceso de la aplicación del RC, utilizando seis formulaciones: T1 (100.0 % y 2.0 %), T2 (100.0 % y 1.0 %), T3 (50.0 % y 0.0 %), T4 (50.0 % y 1.0 %), T5 (50.0 % y 2.0 %), T6 (100.0 % y 0.0 %) de AV y RM, respectivamente. Se evaluó la pérdida de peso, textura, color, vitamina C, sólidos solubles totales, acidez titulable y pH en rabanitos, utilizando el diseño estadístico completamente aleatorizado, con un arreglo factorial 2x3 con tres repeticiones. El mejor tratamiento (T4: 50% de AV y 1.0% de RM) presentó a los 13 días de almacenamiento las siguientes características fisicoquímicas: pérdida de peso (2.15 %), textura (30.05 mJ), color (L* = 81.21, a* = -0.3, b* = 12.88, ΔE = 6.85), vitamina C (12.068 mg/100g), sólidos solubles totales (1.97 °Brix), pH (5.4), acidez titulable (0.0551 %). Las concentraciones de gel de AV y del aceite de RM influyeron de manera significativa sobre las diferentes variables analizadas, resultando una alternativa adecuada para prolongar la vida útil de los rabanitos de IV gama.
