The descriptive and hedonic sensory perception of bacon manufactured using different smoking processes was studied. Six bacon samples were evaluated: three manufactured with woods, two with liquid smokes, and a commercial bacon. Consumers rated their overall liking (OL) and responded the check-all-that-apply (CATA) questions coupled with ideal profile method (IPM). The preliminary result showed that LS2 and Bamboo were the best-rated bacons. However, data analysis indicated two segments of consumers (both n = 50), with significant differences in the OL. The first segment liked fatty and smoked bacons, while the second valued the texture and appearance. The drivers of liking in both segments were the attributes related to texture, juiciness and the smoky aroma. The use of different woods in the bacon smoking process modified the descriptive and hedonic sensory perception of consumers.
Resumen-Esta revisión determina los factores que debe involucrar la educación actual desde una pedagogía universitaria que aborde condiciones sociológicas, psicológicas, axiológicas, culturales y económicas; resaltando también, las competencias que debe abordar el docente en la sociedad del conocimiento y la cantidad pertinente de funciones que las Instituciones de Educación Superior le deben atribuir.
Resumen-En esta indagación se determina los factores necesarios para estructurar un dibujo que represente un objeto, se revisa una breve descripción de las funciones de los hemisferios cerebrales, la teoría de las inteligencias múltiples de Gardner, las capacidades de representación y de percepción involucradas en la destreza y habilidad para dibujar. Este trabajo pretende ser el inicio de un estudio más amplio, donde se planea medir la habilidad para dibujar en estudiantes, con la finalidad de experimentar con metodologías alternativas para enseñar a dibujar.Palabras Clave-Habilidad para dibujar, Inteligencia espacial, Percepción para dibujar, Representación gráfica.Abstract-In this investigation, the necessary factors are determined to structure a drawing representing an object, a brief description of the functions of the cerebral hemispheres, the theory of multiple bits of intelligence Gardner, capacities of representation and perception involved in the skill is reviewed and ability to draw. INTRODUCCIÓN La habilidad para dibujar ha sido siempre motivo de discusión sobre la capacidad en los individuos, si esta habilidad es innata o adquirida por la experiencia, sobre esto nos señala el pintor renacentista Da Vinci (2005): "La pintura no puede enseñarse a aquellos que no han sido dotados con cualidades naturales, como sucede por ejemplo con las matemáticas, en las que el alumno aprende cuanto el maestro le enseña."En laépoca de Da Vinci hablar de pintura era hablar también de dibujo ya que esteúltimo se lo consideraba parte del primero, por lo tantoél era partidario de que se necesita una habilidad natural para poder aprender a dibujar y pintar.Es natural que con los avances científicos actuales sobre el cerebro se pretenda estudiar a fondo su funcionamiento para comprender mejor la inteligencia humana y su capacidad en el medio. Muchos artistas y maestros están de acuerdo en que el dibujo puede enseñarse a personas con poca habilidad, siempre y cuando se estimule las zonas cerebrales que intervienen en la capacidad para dibujar, de esta forma, la doctora Edwards (1984) en libro "Aprender a Dibujar con el Lado Derecho del Cerebro" expone un método para enseñar a dibujar, basado en los estudios de como los hemisferios del cerebro procesan la información, según ella, es necesario pasar del hemisferio izquierdo (procesamiento analítico y verbal) al hemisferio derecho (procesamiento espacial y global) para llegar a obtener habilidades en el dibujo artístico.
