Pereskia aculeata Mill (Cactaceae), popularmente conhecida como ora-pro-nóbis é uma trepadeira arbustiva, classificada como uma hortaliça não convencional, se tornou uma fonte nutricional muito importante para agregar à alimentação de regiões onde a população é de baixa renda e consequentemente apresenta alimentação carente em micro e macronutrientes. Justifica-se esta pesquisa na necessidade de desenvolvimento de novos alimentos que utilizem vegetais outrora não vistos como alimentares, e que podem agregar valor nutricional, bioativo e sensorial à formulação de consumo diário. O objetivo deste estudo foi desenvolver um produto alimentar de panificação. Com o incremento desta planta alimentícia não convencional, que pudesse ser consumido diariamente, bem como, realizar avaliação de sua capacidade antioxidante, composição centesimal e análise sensorial. Trata-se de uma pesquisa explicativa experimental, preocupando-se em identificar fatores contribuintes ou determinantes para a ocorrência de fenômenos. Foram colhidas duas amostras de ora-pro-nóbis, uma às 6h da manhã e outra às 18h, e elaborouse dois bolos (um com a planta colhida pela manhã e outro com a planta colhida pela tarde), utilizando como base o bolo tipo layer, acrescido de 10% de P. aculeata. Para cada produto foi avaliada a composição centesimal, bioativa e aplicou-se avaliação sensorial. A amostra de bolos da ora-pro-nóbis colhidas pela manhã obteve maior teor de proteínas (9.48%), índice de aceitabilidade superior, maior intenção de compra e menores resíduos na boa após deglutição. Todavia, apresentou menor capacidade antioxidante avaliada por DPPH, ABTS e antocianinas comparada à amostra colhida pela tarde. Com base no exposto, observa-se que a P. aculeata pode ser utilizada na fabricação de produtos de panificação, incrementando seu valor nutricional e capacidade bioativa, além de garantir boa aceitabilidade sensorial e elevada intenção de compra. Todavia, estudos futuros são necessários com o objetivo de incluir a ora-pro-nóbis em outras preparações alimentares.
