O desperdício e os altos investimentos em conservação com cadeia do frio são grandes problemas para con-servação de frutos no país, ocasionando altos índices de perdas no mercado atacadista e varejista. Assim sendo, a presente pesquisa foi desenvolvida com o intuito de caracterizar físico-quimicamente as bananas in natura e desidratadas nos parâmetros de umidade (%), cinzas (%), acidez em ácido cítrico (%), sólidos totais (%), sólidos solúveis em ºBrix, pH, ratio (SST/ATT), acidez total titulável(%). A banana in natura apresentou sólidos totais de 31,5 %, pH de 4,55e umidade de 68,50 %, teor de água relativamente elevado fazendo com que o fruto esteja sujeito a ação de micro-organismos.Na banana desidratada, os valores de SSe pH aumentaram, respectivamente, para 27,93% e 6,39, a umidade caiu para 18,00%. Ante o exposto, observou-se uma concentração acentuada de nutrientes e uma diminuição brusca do teor de agua; podendo exercer assim uma maior vida útil ao produto.
