El objetivo de esta investigación fue optimizar el proceso de extracción de antocianinas obtenidas de berenjena (Solanum melongena L.) y evaluar su capacidad antioxidante. A extractos de piel y pulpa se le realizaron análisis fisicoquímicos, contenido en fenoles y antocianos. Para la optimización del proceso de extracción de las antocianinas se empleó la metodología de superficie de respuesta con tres factores: concentración de solvente etanol acidificado 1% ácido ortofosfórico (50 a 90% v/v), temperatura extracción (30 a 60°C) y tiempo extracción (4 a 12 horas). La evaluación de la capacidad antioxidante se realizó empleando el método ABTS (6-sulfonato-3-etilbenzotiazolina). El proceso de extracción de antocianinas de la cáscara sigue un modelo cuadrático, mientras que la capacidad antioxidante tuvo un comportamiento lineal. La optimización del modelo mostró que las condiciones de extracción con 50% de solvente acidificado, tiempo de proceso de 4 horas y temperatura de 30 °C presentó los mayores contenidos de antocianinas, alcanzando 62 mg/100g.
ResumenSe estudió el efecto de la carboximetilcelulosa y la temperatura en las propiedades termofísicas, los coeficientes de transferencia de calor y masa, pérdida de humedad y ganancia de aceite durante la fritura de trozos de batata. El calor específico, conductividad térmica y densidad se determinaron mediante ecuaciones experimentales y la difusividad térmica se determinó según su definición física a partir de los valores de las otras propiedades termofísicas. Los coeficientes de transferencia de calor y masa se determinaron gráficamente basados en las soluciones de las ecuaciones diferenciales de conducción de calor y de concentración de humedad, en una dimensión y utilizando la regla de la superposición para ajustarla a un plato finito. Los resultados indicaron que las propiedades termofísicas de la batata varían significativamente durante la etapa de freído. El coeficiente de transferencia de calor h es mayor cuando aumenta la temperatura del aceite y se utiliza recubrimiento. El coeficiente de transferencia de masa kc es mayor cuando aumenta la temperatura del aceite y no se utiliza recubrimiento comestible. Además, se observó que el recubrimiento comestible disminuye más del 30 % el contenido de aceite final para todas las temperaturas de freído utilizadas, lo que hace que sea una excelente elección para mejorar la calidad nutricional de los productos fritos. ABSTRACTThe effect of temperature on Carboxymethylcellulose and thermophysical properties, heat transfer coefficients and mass, moisture loss and oil uptake during frying of potato chips was studied. The specific heat, thermal conductivity and density were determined using experimental equations and the thermal diffusivity was determined by their physical definition from the values of other thermophysical properties. The heat transfer coefficients and mass were determined graphically based on the solutions of the differential equations of heat conduction and high moisture, and using one-dimensional overlap rule to conform to a finite plate. The results indicated that the thermophysical properties of sweet potatoes vary significantly during the frying stage. The heat transfer coefficient h is greater when the oil temperature increases and coating used. The mass transfer coefficient kc is greater as the temperature increases and no edible oil is used. Moreover, the edible coating decreases more than 30% oil content for all end frying temperatures used, which makes it an excellent choice for improving the nutritional quality of the fried products.
ResumenSe obtuvo extractos de antocianinas de berenjena (Solanum melongena L.) con maltodextrina mediante secado por aspersión, evaluándose la estabilidad del pigmento en polvo en bebidas isotónicas y bebidas a base de aloe vera. Las condiciones de secado por aspersión fueron temperatura de entrada de aire de 180 °C y concentración de sólidos en la alimentación del 30 % (en masa). En las bebidas con pigmento se analizaron los cambios en color y contenido de antocianinas durante el almacenamiento del producto a 4 °C y 25 °C. La temperatura de almacenamiento influyó en la estabilidad de antocianinas y también en los parámetros de color, siendo la temperatura de 25 °C la que produce mayor velocidad de degradación en ambas bebidas. La bebida isotónica y la bebida a base de aloe vera con maltodextrina y almacenada a 4 °C presentaron mayor retención de antocianinas (54 y 77.5 % respectivamente). The spray drying conditions were inlet air temperature of 180 ° C and concentration of solids in the feed of 30% (by mass). In the pigmented beverages changes in color and anthocyanin content of the product during storage at 4 ° C and 25 ° C were analyzed. Storage temperature had influence on anthocyanin stability and also on the color parameters. The highest degradation kinetics in both beverages occurred at 25 °C. Isotonic drinks and aloe vera extracts with the addition of maltodextrin and stored at 4 ° C exhibited higher retention of anthocyanin (54 and 77.5% respectively).
ResumenSe han elaboraron diferentes formulaciones de tabletas de chocolate amargo, chocolate blanco y de chocolate con leche, usando la norma NEIAL-6737: 2006. Se realizó una evaluación de la dureza a 2 y 4 mm de penetración, consistencia "K" calculada a partir del ajuste del modelo de Mottram, esfuerzo de fractura y modulo elástico. Los resultados muestran que para la dureza existen diferencias significativas (p ≤ 0,05) entre la tableta amarga y la blanca. Los valores de la consistencia fueron significativamente diferentes (p ≤ 0,05) indicando que existen diferencias de textura entre las tabletas de chocolate amarga, blanca y de leche. Para la fracturabilidad, las tabletas amarga y blanca no presentaron diferencias significativas (p ≤ 0,05) entre sí en cuanto a esfuerzo de fractura ni módulo elástico. Pero estas a su vez, se fracturan a esfuerzos significativamente menores (p ≤ 0,05) que las tabletas de leche. Hardness at 2 and 4 mm of penetration, consistency K calculated from Mottram`s model, fracture stress and elastic modulus were determined. The results show that for hardness, significant differences (p ≤ 0.05) between the bitter pill and white were found. The values of consistency K were significantly different (p ≤ 0.05) indicating that there are differences in texture between the bitter chocolate bars, white and milk. For fracture, bitter and white tablets showed no significant differences (p ≤ 0.05) between them in terms of fracture stress or elastic modulus. But these, in turn, are fractured with significantly lower efforts than milk bars.
ResumenSe extrajeron los compuestos fenólicos del rizoma de la cúrcuma (Curcuma longa) empleando como disolvente etanol al 75%. Los compuestos fenólicos presentaron una concentración de 1768.8 mg/L expresados como ácido gálico y se adicionaron a una matriz lipídica. Se determinó la actividad y el potencial antioxidante del producto natural y se comparó con el potencial antioxidante del hidrotolueno butilado (BHT), encontrándose que el extracto de cúrcuma mostró un potencial antioxidante similar al del BHT evaluado a las mismas condiciones. El estudio aporta al conocimiento sobre la extracción de compuestos antioxidantes de origen natural mostrando los beneficios que presentan frente a sus análogos de origen sintético. The phenolic compounds presented a concentration of 1768.8 mg/L expressed as gallic acid and were added to a lipid matrix. The antioxidant and potential activities of the natural product were determined and compared with the antioxidant potential of the synthetic antioxidant (BHT) finding that turmeric extracts had antioxidant potential similar to that of BHT, both tested at the same conditions. The study gives new information on the extraction of natural antioxidant compounds showing the benefits that they have over synthetic compounds.
