A vitamina B12 é um micronutriente não sintetizado pelo corpo humano, na qual apresenta fundamental importância em reações indispensáveis à formação de novos tecidos no corpo. Encontrado principalmente em alimentos de origem animal, vegetarianos e veganos são suscetíveis à deficiência desse micronutriente. Assim, o consumo de vitamina B12 via alimentos fortificados favorece a acessibilidade para este público. A deficiência da vitamina B12 é relatada em todo o mundo e pode causar transtornos hematológicos, neurológicos e cardiovasculares e, a microencapsulação da vitamina com aplicações prospectivas em alimentos pode fornecer uma solução para esse problema. O presente estudo teve como objetivo avaliar a viabilidade da microencapsulação de vitamina B12 por spray drying para enriquecimento de alimentos plant-based por vias bibliográficas online e impressas, no lapso temporal 1998 a 2023, através de descritores como: “Vitamin B12”, “Microencapsulation”, “Vegetarian”, “Food Plant-Based”, extraídas de diversas bases de dados como: Science Direct, Scielo e PubMed, através da análise do conteúdo qualitativo. Assim, observou-se que os assuntos isolados que sustentam a hipótese são bem desenvolvidos e indicam a viabilidade do objetivo proposto, mas quando se estreita a busca, o conteúdo é escasso, sugerindo demasiada relevância para este trabalho.
