Ainda que seu consumo venha aumentando nos últimos anos, os cogumelos ainda não ocupam lugar significativo nas refeições brasileiras, seja devido ao preço encontrado no mercado, dificuldades enfrentadas durante seu cultivo ou falta de conhecimento acerca de seus benefícios. Nesse sentido, o objetivo deste trabalho foi reunir características nutricionais e físico-químicas acerca dos cogumelos mais consumidos no Brasil. Realizou-se um levantamento na literatura das espécies de cogumelos mais consumidos no Brasil utilizando palavras-chave como “consumo” “composição centesimal” “características físico-químicas” “Agaricus bisporus” “Pleurotus ostreatus” “Agaricus blazei” e “Lentinula edodes” e não foi feita nenhuma limitação quanto ao ano de publicação. O teor de proteínas variou de 9,83 a 41,92% entre as espécies, carboidratos de 23,4 a 70,91% e fibras alimentares de 12,76 a 46,62%, e estudos indicam que essa variação pode ser resultado dos diferentes substratos utilizados no cultivo que cada espécie. O presente trabalho teve por objetivo determinar composição centesimal do cogumelo Shitake (Lentinula edodes), bem como determinar a melhor temperatura de secagem. Os cogumelos foram submetidos à secagem em estufa com circulação de ar a 45°C, 47,5°C e 50°C e pesados de 30 em 30 minutos a fim de se obter uma curva de secagem. Foram feitas três repetições. As amostras submetidas a 50°C apresentaram maior perda de umidade no tempo de secagem decorrido, indicando que esta temperatura tem melhor desempenho. Na determinação da composição centesimal, as amostras apresentaram média de 28,55% de proteínas, valor este que está dentro dos valores encontrados em literatura. Para lipídios e cinzas as médias foram 6,08% e 1,48%, respectivamente, valores estes não compatíveis com os encontrados em estudos semelhantes. A melhor temperatura de secagem foi a de 50º C, no entanto são necessários mais estudos acerca do processo de secagem a fim de se determinar com maior precisão os melhores parâmetros, bem maior aprofundamento acerca da influência de diferentes substratos utilizados na composição de cogumelos comestíveis.
