This study evaluated the effect of enriched artemia nauplii with commercial probiotic for angelfish larvae determining productive performance, intestinal modulation and survival. Therefore, it experiment occurred in completely randomized design with five treatments (T1- 0.0, T2- 1.5, T3- 3.0, T4- 4.5 and T5- 6.0g of commercial probiotic) and four replaces during 20 days. After larvaculture, post larvae passed by biometric procedures to determine productive performance and then microbiological analysis. Occurred reduction of total heterotrophic bacteria while increased lactic acid bacteria in the intestinal tract from the post larvae for treatments T3, T4 and T5. The commercial probiotic also increased the survival and performance as final weight, weight gain and specific growth rate. For these reasons, the use of 3g of commercial probiotic promotes greater performance and intestinal modulation for angelfish larvae.
Objetivou-se avaliar as características morfométricas, os rendimentos de cortes e a composição centesimal do híbrido tambacu. Utilizou-se 40 exemplares distribuídos em delineamento inteiramente casualizado, composto por quatro tratamentos referentes as classes de peso (T1= 800-1000g, T2= 1001- 1200g, T3= 1201-1400g e T4= 1401-1600g), e dez repetições. Foram avaliados os seguintes parâmetros morfométricos: comprimento da cabeça/comprimento padrão (CC/CP), comprimento da cabeça/altura da cabeça (CC/AC), comprimento padrão/comprimento total (CP/CT), largura do tronco/comprimento do tronco (LTR/CTR), largura do tronco/altura do tronco (LTR/ATR) e altura do troco/comprimento do tronco (ATR/CTR) e os seguintes rendimentos (%): carcaça (peixe eviscerado), tronco limpo, filé com pele, filé sem pele e da pele, sobras em “V”, índice de gordura visceral (IGV), espinhaço, cabeça e resíduos. Foram determinados, ainda, a composição centesimal utilizando-se cinco filés de cada classe de peso. Os parâmetros, CC/CP e LTR/ATR, apresentaram efeito da classe de peso (p<0,05). Observou-se diferenças significativas entre os rendimentos de pele e índice de gordura visceral (IGV), com valores médios 8,55% e 3,05% respectivamente. Na avaliação da composição centesimal, apenas a umidade não apresentou diferença significativa entre os tratamentos. Os valores mais elevados de lipídios (LP) foram 10,54%, em T2 e proteína bruta (PB) 16,68%, em T4. Os exemplares com peso médio variando de 800 a 1600g, apresentam semelhanças tanto para as relações morfométricas quanto para rendimentos de cortes. Entretanto, os peixes da classe T4=1401-1600g, apresentam adequados níveis de lipídios e elevados valores de proteínas bruta nos filés de tambacu cultivado.
Food labeling has the function of providing information facilitating the decision-making power of the consumer on whether or not the food is consumed. Labeling of processed fish was observed in the supermarkets of the municipality of Castanhal-PA. A checklist based on Normative Instruction No. 22 of November 24, 2005 was applied for the evaluation of product labels. Two evaluations were carried out: first comparing the establishments with the mandatory items in the current legislation and the second, compared the labels of eight fish Products, including canned goods, where the labeling had the highest number of mandatory information. The best result was observed in supermarket "L" with averages of 6.5 points of adequacy to the legislation, the lowest values are attributed to the "I" supermarket with an average of 4.45. The absence of items 1, 3, 4, 5, 8, 9 of the checklist, which correspond to the name of the product, the name and address, the registration number of the competent authority, lot identification, conservation and defrosting respectively. Ineligible labels have been found or even in handwritten form. Packing date and expiration date information was contained on most packages, with the exception of frozen piramutaba fillet, batch identification, was not contained on the labels of various products, except for salmon fillet and canned.
The effects of smoking processes on the sensory and proximate components of two species of shrimp were evaluated. Sixty specimens of each species were distributed in a completely randomized design, with two treatments (T1 = hot smoking and T2 = liquid smoking), and fresh shrimps samples were used as control (T3). The sensory characteristics were evaluated using the 9 point hedonic scale and the acceptance index. The centesimal composition was evaluated based on 100 g from each treatment and the fresh samples. The data were submitted to one-way ANOVA and Tukey's test. The results of sensory analysis showed significant variations (p <0.05) for the attributes analyzed among the species, whereas among the smoking processes there was no significance (p >0,05). The acceptance rate was above 70% for amazonian prawn and 80% for white shrimp, regardless of the smoking method. The proximate analysis showed significant differences between the two smoking processes, hot and liquid, with moderet values of lipids, between 0.27% and 1.51%, and high protein values, of 24.61% 24.13%, for white shrimp and amazonian prawn, respectively. The smoking processes altered the sensory and chemical profile of the prawns, causing good acceptance and adequate nutritional constitution for smoked fish.
