Fruit growing is a way to boost the economy of the Northeast. It is believed that the understanding of the chemical characteristics and nutritional value of fruits serves as a tool to propose improvements in the form of consumption and in the use of these foods. The exposed work aimed to evaluate the physical and chemical characteristics of tropical fruits sold in open markets in the city of Mossoró–RN. For this, pineapple, banana, mango and cashew fruits were purchased, these were cleaned and submitted to analyzes of pH, humidity, vitamin C, soluble solids and total soluble sugars. The results show that the analyzed fruits have an approximate pH value, with the average of the range between 3.9 – 4.2, showing that the fruits have an acid character. The moisture content varied between 81% and 71% for cashew and banana, respectively. The concentrations of vitamin C were quite variable, with cashew the most concentrated and pineapple the least, with an average of 49.5 and 17 mg of vitamin C/100 g of fruit, respectively. For soluble solids, pineapple and mango were the fruits with the highest concentration, however, when evaluated the total soluble sugars the banana is the fruit with the highest concentration. Therefore, it can be seen that tropical fruits had an excelente nutritional value and a high content of antioxidant compounds.
Melões 'Orange Flesh' minimamente processados foram armazenados por 8 dias sob refrigeração (6 ± 1ºC e 90 ± 5% UR) e atmosfera modificada (passiva e ativas: 5% O2 + 5% CO2 e 2% O2 + 10% CO2). As variáveis pH, acidez titulável, sólidos solúveis e acetaldeído não foram influenciadas pelas atmosferas estudadas. Aumentos na concentração de CO2 ocorreram ao logo do armazenamento, sendo que a atmosfera modificada ativa (2% O2 + 10% CO2) foi mais eficaz no controle da produção de CO2 até o quarto dia de armazenamento.
RESUMO - INTRODUÇÃOO tomate ( Lycopersicon esculentum Mill) é classificado como fruto climatérico e está entre os produtos agrícolas recordistas em perdas, em razão da sua elevada perecibilidade. O complexo processo de maturação dos frutos é controlado geneticamente e coordenado por uma série de alterações fisiológicas e bioquímicas que afetam principalmente o sabor, odor, cor e textura (Lurie et al., 1996), que tornam o fruto aceitável para o consumo. O amadurecimento caracteriza-se por uma seqüência de alterações sincronizadas e evidenciadas por mudanças na taxa respiratória, produção de etileno, síntese de carotenóides, desenvolvimento de "flavor", alteração na textura (Lobo, 1981), degradação da clorofila, produção de açúcares, alteração no metabolismo de ácidos orgânicos e amidos, aumento na atividade de enzimas pectolíticas, maturação das sementes (Tigchelaar et al., 1978), que ocorrem em um período relativamente curto.Algumas pesquisas visam a melhorar as características químicas, tais como, sólidos solúveis t otais (SST), acidez total titulável (ATT) e pH dos frutos. As variações no teor de sólidos solúveis totais entre os frutos de diferentes genótipos são atribuídas a diversos fatores, entre os quais a capacidade do fruto de importar assimilados fotossintéticos. Aproximadamente metade da matéria seca dos tomates é constituída por açúcares redutores, cerca de 25% ácidos orgânicos e aminoáci-dos, lipídeos e minerais e o restante, sólidos insolúveis em álcool. Desse modo, avalia-se a importância dos açucares e ácidos orgânicos como constituintes principais tanto da matéria seca total como dos sólidos solú-veis totais em tomates (Young et al., 1993).A aparência do fruto, baseada principalmente na coloração, é um atributo de qualidade que afeta diretamente a sua aceitação comercial (Gómez et al., 1998). A coloração externa do tomate é resultado da pigmentação da polpa e da casca e a cor é condicionada não só pela quantidade total de carotenóides, mas também pela relação licopeno/betacaroteno, a qual é importante na coloração final, variando com o grau de maturação. Os genes alc e rin interferem diretamente na síntese de pigmentos carotenóides (Lobo, 1981). Em homozigose, esses mutantes afetam drasticamente a síntese de licopeno (Kopeliovitch et al., 1979;Lobo, 1981) e betacaroteno (Araújo, 1997), não permitindo que os frutos desenvolvam coloração aceitável; entretanto, em heterozigose (alc + /alc e rin + /rin), atuam no sentido de prolongar a firmeza sem que a coloração se torne um fator limitante.A redução da textura é resultado da atividade de enzimas hidrolíticas de parede celular que interferem na integridade dos tecidos sob ação da pectinametilesterase (PME) e poligalacturonase (PG) (Vilas Boas, 1998). RESUMOO aumento da demanda por produtos minimamente processados traz um grande desafio para a ciência e tecnologia de alimentos, considerando-se a escassez de informações sobre a manutenção da qualidade desses produtos. O armazenamento destes em condições adequadas é um ponto fundamental para o sucesso dessa tecnologia. Objetivou-se com este trabalho avaliar o efeito da atmosfera modificada ativa na qualidade e conservação do melão 'Orange Flesh' minimamente processado. Os frutos, após o processamento, foram embalados sob atmosfera modificada (AM passiva -controle, AM ativa com 5% de CO 2 e 5% de O 2 e AM ativa com 10% de CO 2 e 2% de O 2 ), armazenados em câmara fria (6°C ± 1°C e UR 85% ± 5%) durante 8 dias e as amostras retiradas para análises físicas, físico-químicas, químicas e sensoriais, a cada 2 dias de armazenamento. A atmosfera modificada ativa pouco influenciou no comportamento das variáveis pH, acidez total titulável, firmeza, pectina total e sabor com relação à atmosfera modificada passiva. Menor solubilização de pectinas foi detectada nas amostras armazenadas sob atmosfera com 10% de CO 2 e 2% de O 2 . Os atributos de qualidade, sabor e textura não sofreram deteriorações durante os 8 dias de armazenamento, em todos os tratamentos, de acordo com a análise sensorial.Termos para indexação: Melão, 'Orange Flesh', minimamente processado, atmosfera modificada, qualidade. ABSTRACTThe increase of the demand for products processed minimally brings a great challenge for the food science and technology, being considered the shortage of information about the maintenance of the quality of those products. The storage of these products in appropriate conditions is a fundamental point for the success of this technology. The objective of this work was to evaluate the effect of the active modified atmosphere in the quality and conservation of the melon 'Orange Flesh' processed minimally. The fruits, after the processing were wrapped under modified atmosphere (passive AM -control; active AM with 5% of CO 2 and 5% of O 2 and activate AM with 10% of CO 2 and 2% of O 2 ), stored at (6°C ± 1°C and R.H. 85% ± 5%) during 8 days and the retired samples for analyses physics, physical-chemistries, chemistries and sensorial every 2 days of storage. The variables texture, flavor, acidity titratable and total pectin, they were not affected for the active modified atmosphere. Smaller solubilization of pectins and larger retention of neutral sugars, they were detected in melons under atmosphere with 10% of CO 2 and 2% of O 2 . The quality attributes, flavor and texture did not suffer deteriorations during the 8 days of storage, in all the treatments, in agreement with the sensorial analysis.Index terms: melon, processed minimally, modified atmosphere, quality.
